Peppermint Bark

The store was out of peppermint extract, so I just crushed the candies in the blender and mixed them directly into the chocolates. Also, I missed the part about refrigerating the semi-sweet layer while preparing the white chocolate layer, so the final product ended up a bit... muddy. But still delicious!

Butternut Squash-Sweet Potato Ginger Bisque

If I had followed this recipe to the T, it would have been extremely bland. Here's what I did to make it yummier: curry powder, cayenne pepper, cinnamon, 3x the amount of yogurt, 2x amount of ginger. To make it easier to peel, I cut the squash in half and baked it at 400 with some water in the pan. I let that cook until I had my sweet potatoes prepped and in the pots. By the way, this recipe makes A LOT. I have at least two weeks' worth of lunch. It took me about an hour and 15 minutes to make it.

Whole Wheat Bread III

For now I'm giving this three stars. The lack of manual instructions is frustrating, especially for those of us who don't want to use a bm. Thanks to the user who posted non-bm instructions! The flavor is ok, but a tad sweeter than what I wanted. My bread didn't rise at all, but I think that is probably my fault: I only had 2.25 tsp of yeast, and I didn't let the dough rise after kneading. I will be trying this again, though!

Lentil Soup III

Kind of boring and flavorless. Even with the alterations I made (carrots, a few bay leaves, more garlic, a jalapeno pepper, ground black pepper), it was decent at best. I had to add way more than the required amount of broth for it to become remotely soup-like. Giving it three stars because it may be something I return to. It does provide a good base upon which you can probably build a delicious dish. By the way, this recipe makes A LOT.

Buffalo Chicken Wings III

A good recipe to go off of! I followed it exactly the first time (with extra spicy Frank's), and it was delicious! However, I would like it more spicy. It seems like it can be easily modified, so I think next time I'll try sautéing some garlic and peppers in the butter.

Beans, Some Like It Hot!

I didn't think this was BAD per se, but nothing to write home about. The volume of spices in this recipe made the sauce seem kind of pasty/gritty. Maybe I'll try it again with half the ginger that's listed, but that won't fix the pasty problem.

Banana Pancakes I

These are really moist and yummy. I added cinnamon, vanilla extract, ginger, and nutmeg. We didn't have whipped cream or syrup, so we ate them with peanut butter. Yum! Next time I'd like to add some nuts (walnuts or pecans) and chocolate chips.

This is delicious. :) I added 1 tsp of ginger and some chocolate chips and cranberries. I could have done without the cranberries, but the chocolate chips make it extra good! Thanks for the great recipe.

Thai Curry Tofu

This was my first successful meal with tofu. I pressed it by putting a plate with two cans on top for about 15 minutes, and then fried it with LOTS of oil. The rest of the dish was pretty easy, but too mild by itself. I added half of a habanero pepper, broccoli, cauliflower, green peppers, halved grape tomatoes, and some cayenne pepper and chili powder. A 14-oz can of coconut milk provides enough sauce for the extra veggies.

Chicken Tikka Masala

I agree that this recipe has waaaay too much salt in it, and I only put about half of the listed amounts. It's too much for me, but my salt-addicted husband loves it. The tikka masala we are used to has chunks of onion and green peppers in it. I miss the vegetables and will be adding them into the marinade next time.

Easy Cranberry Granola

This was good! I only used about a cup of honey, and it was sweet enough for me. If you like bigger clumps of granola, try pressing it down into the pan before you bake it, and don't stir it while it's cooking.
