Chicken Pot Pie I
This recipe is bland, bland, bland and way too pre-packaged/processed for my taste. To anyone wanting to try this recipe I suggest adding some fresh or dried thyme and plenty of freshly ground black pepper to liven it up a bit.

Hawaiian Chicken Salad
Ok, here's what I did. Scaled the recipe down to 3 servings since I wasn't 100% sure how well I would like this, used two medium sized teriyaki-glazed grilled chicken breasts cut into small cubes. I used Neufchatel cheese and halved the amount called for in the recipe. I toasted the almonds and added some flaked coconut and a couple squirts of canned whipped cream. If you are a fan of coconut, I definitely recommend adding it. It was sooooo good. Also definitely refrigerate it overnight to let the flavors meld, it makes a huge difference.

Curry Chicken Salad
This is a basic recipe that would benefit greatly from some simple additions such as golden raisins, toasted almonds, plain yogurt and mango chutney. Sometimes I add grape halves instead of raisins or mandarin oranges depending on what I have on hand. I also use hot Vietnamese curry powder because it has so much more depth of flavor than the run of the mill supermarket variety.
