Gourmet Chicken Pizza

I wanted something with fewer calories and fat so I omitted the ranch dressing and used a can of Hunt's spaghetti sauce instead. I also sprinkled it with some homegrown basil from my window sill. It was great.

Chicken and Mandarin Oranges

Daughter (13-yr old who usually loves anything asian-inspired) didn't like. Husband said it reminded him of carry out "lemon chicken" but it was just "okay". I added some brown sugar because it just didn't seem sweet enough. That helped a bit.

Eggplant Parmesan II

Excellent; even my non-eggplant loving husband liked it! I also salted the eggplant and let it sit and baked eggplant in oven at 450 for 10 min per side. I decreased the baking time of whole casserole to 20 min. and it was still fine (we were hungry and in a hurry!) I used 3 eggs for dipping and removed the yolks from two.

Insalata Caprese II

Family loved it (except for 10 yr old who "doesn't like vegetables"). I committed the big faux pas of using dried basil but in a pinch it worked. I also added balsamic vinegar to the olive oil as one other reader suggested and it added great flavor!

Baked Chicken Nuggets

Yum Yum Yum. I agree that it was not as crispy as some kids would like, but it was fine for me and hubby (and kids ate it up, too!). I made half by just spraying with Pam Olive Oil spray (instead of butter) and then dipping in crumbs...tasted great and saved calories/fat.

Judy's Strawberry Pretzel Salad

Very good! I agree with most comments however, do NOT leave jello in frig. too long or it will be clumpy and bumpy and hard to pour over cream cheese! Also I would spray bottom of pan with Pam and NOT bake crust too long. Mine stuck a wee bit (might have been because I rant out of pretzels, too, and substituted a few ritz crackers which was delish!) Hubby said "delicious"; one woman at picnic said "thanks for bring back a delicious memory from my childhood"!

Banana Pumpkin Bread

Needs to bake more than 45 minutes! My loaf took more than one hr 10 min. Not sweet enough, too (and I'm not one for overly sweet things). I would increase honey and/or sugar. Very dense. I added raising, nice touch. Will probably not make it again.

Bavarian Brownies

Daughter had a sleepover and wanted to make brownies (spur of the moment). All I had was a yellow cake mix and chocolate chips. We made this without nuts and increased the butter just a tad. They were yummy! We called them Golden Brownies.

Incredibly Cheesy Turkey Meatloaf

Whole family loved it. I added onions and celery finely chopped. Also added worcestershire (sp) sauce and used Honey BBQ sauce on top. As an added health benefit, I added 1 Tbsp flax seed meal (for omega-3). I only had a mixture of grated mozarella and provolone + Velveeta cheese but they worked fine (I added less than what was called for).

Chicken Breasts with Balsamic Vinegar and Garlic

I liked; husband said it was "just a smidge away" from being true gourmet; 13-yr old and 10-yr old didn't like (13 yr old will eat most anything; she didn't like the balsamic taste). I served on fettucine and omitted flour on chicken but stirred some into sauce.

Mexican Casserole

Very good; black beans make the dish. I boiled the chicken instead of cooking it in the pan and then I just mixed all the ingredients together in the casserole dish. Worked fine! 13-yr old had 3 helpings!

Baked Sweet Potatoes

LOVED this recipe; I've been looking for a way to incorporate sweet potatoes in my diet without making the syrupy sweet version usually seen (I HATE sweet vegetable dishes!). I will try other spices but I liked the oregano. THANKS!!!

Baked Teriyaki Chicken

Very good; I did not think, however, that you needed to double the recipe. I used boneless, skinless thighs and since I had so much sauce left, I threw in a couple of turkey cutlets. The thighs were far superior to the turkey cutlets. I used white sugar and honey to sweeten the sauce.

Cheese Lover's Tuna Casserole

I loved it; I usually pass tuna off as chicken in my family because kids AND husband "think" they don't like tuna but they almost always gobble it up and ask for more. Today, they saw the tuna can...drat! I used bread crumbs instead of croutons and I only used 1/2 cheese called for. Yummy good, even if my family won't eat it!

Slow Cooker Chicken and Dumplings

Family loved it; sauce was too thin; next time I won't add so much water/chicken broth. I would have loved to add some frozen peas but my family doesn't like them! I added cumin and poultry seasoning per previous reviewers.

Taco Casserole

Husband and 13-yr old loved it; 10 yr old did not. I thought tortilla chips AND macaroni was a bit too much starch so I cut back on the tortilla chips. It was great served with salsa, too!

Santa Fe Soup

I used Ro-Tel which made it somewhat spicy (too spicy for my 10-yr old). My 13-yr old and husband loved it, though! I also added some taco seasoning and sprinkled tortilla chips as a garnish. Afraid to think how fattening it is!

Just okay; I'm a novice so the whole "wreath" thing didn't come out as nicely as I would have liked (I used reduced-fat crescent rolls). Everyone else was correct; I had WAY too much filling. Very good but not a complete 5-star, out of the park home-run.
