To Die For Blueberry Muffins
My husband is a low-carb, anti-sugar man and he declares these delicious! I did make a few changes. I added 1 tsp. of cinnamon to the dry mix, 1 tsp. of vanilla to the wet mix and I used brown sugar instead of white for the topping (oh, and I cut the topping recipe in half - GREAT suggestion!). As others have mentioned, it was a little difficult to get the muffins out of the pan, but a simple scraping of a knife under the topping helped free them tremendously. The only other thing I would do would be to add some Maui Raw Cane Sugar to the topping to give the muffins a chunkier, more crystalized topping. All in all a great recipe.

Asian Chicken Pasta Salad
I tried this recipe, but modified it as well. I added water chestnuts, bean sprouts, regular white onion, celery, pea pods but eliminated the cauliflower. I still found it a little bland so I added a little bit of sauteed chopped garlic to the mix and it did the trick. Also, instead of water I used homemade roasted chicken juice/grease and used less oil. I served it over Chinese Noodles (Pancit Canton). My husband actually went back for thirds saying, "Wow, this is Good!"
