Mexican Chicken I
I was looking for a good black bean recipe and I stumbled upon this one, it exceeded my expectations! I've never been able to cook such tender, juicy chicken breast until this dish came along. The only alteration I made was instead of using a jar of salsa, I diced up fresh roma tomatoes and added sauteed onions. I followed people's advice of mixing in the black bean with my tomato/onion. I topped the dish off with brown rice and a side salad. A wonderful, low fat and fulfilling dinner!

Black Magic Cake
The first words out of everyone's mouth consisted of compliments of how AMAZING this cake tasted! I was hesitant at first when I was mixing the ingredients because the batter was REALLY runny but I looked through the reviews and other people said not to worry about it - and it's true! The cake turned out very moist and it was easy to remove it off the baking pan. The few changes I made was instead of 2 cups of white sugar, I used 1 cup white 1 cup brown. In addition, I only have instant coffee (my roommate's) and I made my own buttermilk by mixing 1 tablespoon of lemon juice with 1 cup of 1%milk. To top it all off, I had a whipped cream cheese frosting - which really completed the rich chocolate taste. I saw this recipe on the Hershey's cocoa powder box but it's a little different because the baking soda & powder amounts are altered. Thanks again!!

Parmesan Chicken
The chicken came out a little dry but I may have overcooked it. Instead of cooking the chicken over the skillet, I followed another person's comment to bake it for 30mins at 375 degrees. In addition I mixed the butter and oil into the breading for a crispier texture.
