Kevin's Sausage Dip

I've been making this dip for years, but we call it football dip as that is usually when we like to serve it. I use 2 packages of 8 oz cream cheese and I can of rotel with 1 lb of bulk sausage (either or regular or spicy depending on the crowd). It's wonderful with authentic corn tortilla chips or my favorite - Fritos scoops! Not the most appealing look, but absolutely delicious tasting.

Breakfast Pizza

The whole family loves this! It's so easy and feeds large groups when we get together with family using only 1 pan! The only thing I do different is add more pepper and use a 13 x 9 pan instead of the round pan. Thanks for the recipe!

Egg and Sausage Casserole

I love these easy brunch/breakfast recipes! I make one very similar to this and add a cup or two of frozen shredded hash browns to fill up a large crowd with less. Try this with sage or maple sausage for a little different flavor, if you like sage or maple you won't be disappointed

Diane's Colcannon

This is so delicious! I followed the advice of others and used the shredded cabbage for coleslaw. Great timesaver! I also sauted the cabbage in some of the corned beef juices that I was cooking. It tastes almost like bacon and potato perogie filling. BTW my husband is not a veggie eater and he loved it. He even had seconds, ate leftovers, and requested that I not make it only for St. Patty's day. Thanks Diane!!!

Barbeque Halibut Steaks

OMG! I'm not a big fish eater, but this recipe has changed my mind! This was wonderful. I didn't even marinate the fish steaks and it was such a different and wonderful taste. We followed advice to bake and then broil, but tonight we are going to use the grill. I didn't vary from the original recipe and don't think I will much. I prefer more garlic, so I will add a clove more, but this is absolutely delicious. Thanks for sharing Duane!

Burrito Pie

Wow! I wasn't sure what to expect with this recipe, but it's like a mexican lasagna. It kind of tastes like a beef enchilada. I bet this would taste great with shredded chicken. I used Rotel with Habaneros and nixed the extra can of green chiles. It was plenty spicy, but not overpowering. I used burrito sized tortillas as they nearly cover the complete dish. Layered two tortillas between fillings and next time may use 3. My husband didn't look encouraged when I was making the meat filling mixture, but a good cook knows looks can be decieving. It's the taste that matters. This is a family hit and a keeper! Thanks for sharing!

Too Much Chocolate Cake

I make a recipe very similar to this one only I add a teaspoon of almond extract. It adds a deeper tone to the taste and definately does not take away from the extreme chocolate taste in the recipe. It would probably be good with orange or mint extract too! OOOHHH! Now I gotta make a cake and experiment. Anyone want to give me a reason to make this cake?!? LOL

Perfect Pressure Cooker Pot Roast

This is nearly the same as the recipe I religiously use in the crockpot! The only exception is I don't use any oil. Rub the roast with the three packets mixed and add rest to the crockpot. To reduce the saltiness I use 2 cups of water in place of the broth and rump roast or bottom round instead of chuck (less fat). It's a family favorite and has been for years. I serve with egg noodles or dumplings. Delicious and easy. I can make it on the way out the door in the morning.

Chorizo Breakfast Burritos

I love chorizo and eggs for breakfast! I usually cook the chorizo and then set it aside in a bowl. Cook the eggs in the same pan and add the drained chorizo back into the eggs when they are nearly done (like in an omlette). But occassionally we cook diced potatoes and onion (found in the refrigerated section Simply Potatoes) with the chorizo and add them together to the eggs. Also, fold the end of the tortilla like you would when rolling a burrito and the grease won't get all over the place. The potatoes help soak up the grease too! Yummy!!!

Restaurant-Style Buffalo Chicken Wings

My husband loves these wings and doesn't want me to buy store brand or restaurant wings again. I add a little bit more cayenne and garlic powder to the flour mixture and after refrigerating and before they go into the oven or fryer I coat them again in the leftover flour. This makes them SO crispy. My nieces and nephews (7-13) loved these too (with Ranch). It's a great copy cat recipe!

Sweet Party Mix

A new party favorite! The kids and adults alike gobbled it up. I took advice of another reviewer and made it with Rice Chex, peanuts, Cheerios, and M&M's after baking/cooling. Also, I found alphabet pretzels and the kids were trying to spell their names with them. Sweet and salty and chocolate - just took care of my big 3 cravings in one dish... I love it!

Excellent! I made this for my niece's surprise birthday party and everyone loved it. I used half of the sugar called for and stuck with the ginger ale! It wasn't too sweet and wasn't too acidic.

Pumpkin Whoopie Pies

I have been making these treats for 8 years and nobody ever gets tired of them. We have several families to visit for the holidays and one year I didn't bring these and didn't hear the end of it. I keep a cup of warm water handy to dunk my scoop/spoon to remove dough easier. You can also pipe the dough. I also add pumpkin spice in place of individual spices. Very delicious! Very filling!

Chicken Enchilada Dip

This is excellent! I do half and half sour cream / mayo as mentioned. I add a can of Rotel with green chiles and a clove of diced garlic. This tastes good warm or cold. Serve with Authentic corn tortilla chips or Fritos Scoops. I serve warmed enchilada sauce as a dip to this dip. Plus jalepeno slices for those who like more heat.

Overnight Apple Cinnamon French Toast

This is absolutely delicious! I really smooshed the bread down to make it all fit before I poured in the egg mixture. I cut down on the sugar and cooked it for 1-1/2 hours to fully cook the middle. I also uncovered it for the last 1/2 hour. This was delicious and very filling. You only need 1/2 piece (a hungry guy can eat a whole piece). I only fit six slices in a 9 x 13 pan, too (I was able to get 4 slices high - barely). A new family favorite!

Perfect Turkey

This was my first brine recipe! I love it! It is easy and juicier than any turkey I've had before. Definately stuff the cavity with onion, celery and carrots. A family keeper!

Turkey Brine

This was an excellent brine! I do prefer the much simpler salt and water recipe, but if I have the time this is great. I didn't use the savory, but added a bay leaf. I use a large pot that I bought from a warehouse club. I didn't have room in my fridge, but kept adding ice and since it's winter, kept it outside on our 2nd floor balcony out of the sun.

Sausage Gravy I

This is just like the sausage gravy recipe I learned from my friend's grandmother when I was a kid. My mother-in-law also makes it this way. It's a family tradition. Now that I have this recipe, I no longer have to guess at the milk to flour ratio!!!! Thank you, Rene!

Artichoke & Spinach Dip Restaurant Style

I first made this dip and printed this recipe back in 2000 when I joined. It is absolutely delicious. I also use Bertolli alfredo and the whole package of cream cheese. For all of those non artichoke and spinach people - don't be surprised if you love this dip. I just don't tell the kids what's in it.
