Ranch Burgers

Hubby didn't care for these as much as I thought he would. I did use two ounces of the Ranch dressing mix, two eggs, seasoned bread crumbs instead of saltines, dried onion & two teaspoons of Worchestire. He said they were falling apart on the grill.

Reuben Hot Dish

Husband loves this recipe! He says it gets better as it sits. I did add a whole onion chopped, a heaping tablespoon horseradish, 12-16 ounces sliced swiss cheese & ten slices of rye bread buttered then cubed & put on top of cheese. This is the second time I've made this.

We shredded the potatoes by mistake instead of grating them. Also I skimped on the salt & I like alot of salt on my potatoes so next time I'll use the full amount.

Black-Eyed Peas and Gumbo

Good soup! I did make some changes. I used 1/2 cup oil & 2/3 cup flour to start. I added 2 large onions, 4 stalks celery & leaves, 5 cloves minced garlic, 1 bell pepper instead of okra, cooked 10 minutes. Then I stirred in 8 cups of water, 2 cans chopped tomatoes, 1 tablespoon dried parsley, 1-1/2 teaspoon salt, 1 teaspoon thyme, 1/4 teaspoon cayenne pepper, 1/2 teaspoon black pepper, 4 bay leaves & better than beef boullian, simmered 20 minutes or so then added 3 cans black eyed peas, no meat added but I did serve with rice which was good.

Cabbage Rolls II

Make this with some tweaks from other reviewers. I froze the cabbage 2-3 days then defrosted & had no problem separating the leaves. I also added &/or changed 1 large onion, chopped, 1 teaspoon garlic powder, 3/4 teaspoon pepper & tripled the sauce. I also baked these covered for just over an hour. Very tasty!

Graham Moist Lemon Bars

These are much better than I thought they'd be. Be careful baking the graham cracker crust-15 minutes should do it. Mine started to brown along the edges. When making the lemon filling, I beat each ingredient for about a minute & ended up with a light & fluffy batter. I kept it in the oven an extra 5 minutes with the heat off, to set the middle of the lemon filling more. Will make again.

Stuffed Green Peppers I

Great recipe altho I did change & add some things. For the green peppers, after cleaning them, I microwaved, cut side down, 4 minutes on high with a little water on the bottom of the glass dish. I browned 1 pound pork chorizio (sp?) (it's what I had in the freezer), then added 2 onions, 1 cup uncooked rice, 1 cup water, 2 teaspoons worcestshire cooked for almost 15 minutes. Removed from heat & added 2 cups shredded mexican cheese & instead of tomato soup I used a 26-1/2 oz can of spagetti sauce (half in the meat mixture & half on top after stuffing peppers). Baked covered 25-30 minutes. Will definetely make again.

Maraschino Party Cake

I found this cake to be too dry. I added double maraschino cherries & juice plus 1 teaspoon cherry extract. Made in 13 X 9 glass pan. I love maraschino cherries but won't make this again.

A-Number-1 Banana Cake

Delicious recipe. I used 1 cup white & 1 cup brown sugar, added an extra egg, added 1 teaspoon vanilla & 1 teaspoon cinnamon, 1/2 teaspoon baking powder & baked in a tube pan. Will use many times when bananas go bad. Very sweet, really doesn't need frosting.

Banana Date Bars

Very good recipe but it more like cake than bars. The only addition I made to the cake was adding 1 teaspoon cinnamon to the batter. The frosting instead of 2 Tbs lemon juice we used the pulp from a fresh lemon & some juice to equal 2 Tbs. I also needed to increase the powdered sugar to 2-1/2 cups. I will make this again.

Strawberry Trifle

I made this for a Memorial Day party & it was good but not as tasty as I would have hoped. I used Banana Cream instant pudding, a pound of fresh strawberries, made 2 layers each with an 8 ounce container of Cool Whip & let sit overnight. I don't expect to make this again.
