Salt and Vinegar Chicken

My daughter loved this chicken! She said after her favorite lemon baked chicken - this is her favorite and she definitely wants me to make it again. Most of the time we have a recipe and move on to another version.... but I think this one will stick around for awhile!

Easy Pizza Sauce III

I'm not a pizza sauce connoisseur by any means... I need a sauce for another recipe and this was quick/easy and I had all the ingredients in my pantry. I would make again in a minute (literally!) if I needed it.

Quick and Easy Green Chile Chicken Enchilada Casserole

My Chickies love green chile enchiladas way more than red. I make my one homemade green chile sauce with anaheims and pasillo peppers and freeze it to use in this recipe.

Pina Colada Punch

I've made a non-alcoholic version of this punch a couple of times for my daughters parties (birthday, New Years Eve) and it is so good! I wish I could find an occasion to make it with some rum for me!

Old Settlers' Baked Beans

I made this for 4th of July celebration and I had one guy come up to me and say "those are the best beans I've ever had." Later his wife said, "He hates lima beans, but he loved them so much he didn't even pick them out!". I used frozen baby lima beans and this will definitely be my new go to baked bean recipe from now on.

Lasagna Roll Ups

These went together much quicker than I anticipated and both my girls loved them even with the tofu. It made nice portable rolls for leftovers for lunch the next day. I would definitely make again.

Mom's Hearty Beef Stew with Dumplings

Authentic Cincinnati Chili

I've never had Cincinnati Chili before... but we went all out for it and it was very good. We had spaghetti, cheese, and onions. I might make it again if I get a hankering.

We eat a lot of tilapia... I don't know if I'll do this again because one of my Chickies thought it tasted too sweet. I said "it's suppose to".... but if she is happier with lemon/pepper, who am I to argue? LOL

Artichoke & Spinach Dip Restaurant Style

Terrific dip! I made for a get together with friends and it was eaten up quickly by everybody! I made two batches - one as written and a second with the addition of roasted pasillo peppers (because I had some!). People who like a little spice went nuts for that version, others who didn't care for spice were so happy with the original.

Superbowl Sausage Snacks

So easy... well received at my cooking demo at my local stores Holiday Open House. Wasn't as universally liked as the Bacon Cheese Puffs and a little heavy on the processed cheese. If I were to make again I trade out half of the Whiz for half cheddar.

Double Tomato Bruschetta

I made this for a cooking demo in my local grocery store for their Holiday Open House. Everybody went nuts for it! So easy and so delicious. Somebody had the suggestion of putting it on a baked brie in a pastry puff... that would be amazing!

Swedish Meatballs I

I made these pretty much to the recipe. I forgot the onion (how did I forget the onion??) and added salt/pepper and garlic powder to the meatballs. I loved the texture that the cream of wheat gave them, not as heavy as a bread crumb meatball. The sauce was good - I added salt/pepper to that also. A solid 4 1/2 stars (5 stars only for things I'm dying to make again) for an easy dinner.

Garden Fresh Tomato Soup

It only took me 7 years after I put this in my recipe box to make this soup! It was tasty - even though I didn't read the recipe thoroughly enough and used 4 GARLIC cloves instead of cloves. It was still tasty... just with a definitely garlic undertone!
