About this Cook
I'm a single mom living in rural Washington State. I try to make a complete dinner for myself and my two daughters every night - even with our busy pre-teen and teen schedules. I think I'm pretty successful!
My favorite things to cook
I'm definitely a cook - not a baker. I'd rather make a pot of chili than bake a cake or pie any day! I like to make candies at Christmas time and am always on a the look out to make things "homemade" instead of store-bought.
My favorite family cooking traditions
I always say - my grandma couldn't have a meal without gravy! We love our gravies!
My cooking triumphs
Without a doubt my greatest cooking triumph was being selected as one the 100 finalists for the 2010 Pillsbury Bake-off Contest. I don't like to say it was the "experience of a lifetime" because I want to go again!
My cooking tragedies
Well, it involved a cheesecake, a fire in my oven and my resolve that "I'm really not a baker". :)

Salt and Vinegar Chicken
My daughter loved this chicken! She said after her favorite lemon baked chicken - this is her favorite and she definitely wants me to make it again. Most of the time we have a recipe and move on to another version.... but I think this one will stick around for awhile!

Easy Pizza Sauce III
I'm not a pizza sauce connoisseur by any means... I need a sauce for another recipe and this was quick/easy and I had all the ingredients in my pantry. I would make again in a minute (literally!) if I needed it.

Quick and Easy Green Chile Chicken Enchilada Casserole
My Chickies love green chile enchiladas way more than red. I make my one homemade green chile sauce with anaheims and pasillo peppers and freeze it to use in this recipe.
