Smoky Corn Muffins

These are very good; very moist even without sour cream and butter, which taste great but add way too much fat. I was out of liquid smoke (yikes! - a staple after being a veg for years) so I subbed a dry mesquite seasoning. I've never thought of adding salsa to corn bread (although I've added almost everything else)! This is my new healthier fave - thanks!

Bodacious Broccoli Salad

Unreal - I had my reservations but this is awesome (and it hasn't even chilled yet)! I halved the salt & pepper based on other reviews, and left out the lemon juice because I generally hate it. I will try this dressing on other veggie salads - Those who reviewed suggesting you carry the recipe with you when serving it were right on - VERY good!

Healthy Banana Cookies

These are amazingly easy, healthy and delicious! I'm preggers and try to satisfy my occasional sweet tooth in healthy ways, and this is perfect. I did sub milk choc chips (naughty) for dates, and subbed applesauce for about 1/2 the oil. I MUST freeze theese because I can't stop eating them. YUM...Thank you!!!

Corn Dip II

The ratio of corn to "other stuff" in my pantry was out of control, and I had a bunch of crackers to use up from the holidays, so although I changed this up a lot to use stuff I had on hand, it's awesome! I used 1c cottage cheese instead of shredded, and 3 canned chipotles (in adobo w/seeds) in place of chiles and cayenne pepper. Also threw in a couple diced radishes. YUM - very different but a nice flavor, although I am a cumin adict! Thanks for sharing this - easy and inexpensive munchie...would love to try with fresh roasted corn!

Greek Garbanzo Bean Salad

I made this for Christmas dinner and it was excellent! I used a sun-dried tomato and feta dressing instead of Italian, added radishes (had a taste for them...I know weird), used all the black olives called for (YUM) and about 4oz feta. Super fresh and light enough to serve with spinach alfredo lasagna roll ups (from allrecipes also!), but filling enough for leftover lunches. Delish; this will be a regular for me in the summer, and a great alternative to the same ole mixed greens salad (which does not keep well)!

Spaghetti Squash Dip

I made it as written; it was cheesey and good but missing something. I put the leftovers in a small dip crock pot and added green onions, ground black pepper and worcestershire. Better. I think this is way worth making for such a creative use of spaghetti squash, just needs a little tweaking. I will make this again and keep experimenting... :)

All-Day Apple Butter

This was ridiculously easy and awesome! Gave as gifts and was well received. I used Fuji apples so cut the sugar in 1/2 and did use both brown and white sugar. Makes the house smell amazing!!!

Focaccia Bread

Excellent! I made this for Christmas dinner and was told it was restaurant quality. I subbed roasted garlic for the mozz (smashed up in the oil). I did not proof my yeast but was sure to add warm water to the mix. This was deadly good and I'm sure would make an awesome pizza crust. I will make this OFTEN - Thank you!

Honey Corn Bread

I made muffins and got rave reviews from friends, even though I subbed hominy for corn as I had none... even bf loved them despite his hominy phobia. I added about a half t crushed red pepper. I usually doctor up a mix but had none, and these turned out awesome...thx!

Chocolate Chocolate Chip Cookies I

Awesome! I love cooking but baking is a challenge for me...I bought fresh soda for this and it rocks. BF insisted on butterscotch chips (ugh...way too sweet), but I'm still eatin em! Gonna try with dried banana chips and white chocolate chips...thank you much for a cookie that I can actually serve without apologizing for something!

Baked Tortilla Chips

I was skeptical...I've done this with flour torts but tried it with corn...Can you say crispy?! They were super good - I just sprayed with hot pepper olive oil spray (clearance shelf at wally world) and sea salt. I would never have tried this with corn torts and I thank you!!

Jalapeno Cheese Bread

Outrageously good! I cut the recipe in half but still added 1/2 cup (heaping) minced jalapenos (seeds in), and used some cubed cheese as well. Made large rolls and YUM...I work at a Tex-Mex joint and my co-workers loved it too! Quite a bit of heat but easily mellowed by seeding/cutting back on peppers. Thanks much for sharing this!

Soft Giant Pretzels

These turned out pretty good despite a problem; they totally stuck to the paper towels I drained them on. So I boiled them longer, about 30 sec, and plopped them right onto a greased cookie sheet. I think next time I would knead in more flour, also, as they were very fluffy. They were pretty good though, and I will try again.

Pumpkin Chocolate Chip Muffins

Made with white chocolate chips (doubled) - YUM! Subbed applesauce for 1/2 the oil and you'd never know it. Great recipe to satisfy my October first-freeze-of-the-year-night craving! My house smells awesome - thanks for sharing!
