About this Cook
I love gardening and cooking was the next natural step. I have no problem with spending 3 hours in the kitchen every night. I enjoy it! I work mainly nights now and as much as I love it it's a drag to only be able to really cook a couple of nights a week...
My favorite things to cook
For some reason I get the most satisfaction out of making soups from scratch. I also love putting together a gourmet grilled veggie sandwich. I just love cooking what I grow. Mexican fits the bill beautifully!
My favorite family cooking traditions
I grew up in a small family and we really didn't cook elaborate meals very much - maybe because I was such a picky eater as a kid!
My cooking triumphs
Grilled mahi mahi - Yum! FINALLY learned how to make GOOD salsa!
My cooking tragedies
Baking, in general. I enjoy baking but just don't seem to have what it takes.

Smoky Corn Muffins
These are very good; very moist even without sour cream and butter, which taste great but add way too much fat. I was out of liquid smoke (yikes! - a staple after being a veg for years) so I subbed a dry mesquite seasoning. I've never thought of adding salsa to corn bread (although I've added almost everything else)! This is my new healthier fave - thanks!

Bodacious Broccoli Salad
Unreal - I had my reservations but this is awesome (and it hasn't even chilled yet)! I halved the salt & pepper based on other reviews, and left out the lemon juice because I generally hate it. I will try this dressing on other veggie salads - Those who reviewed suggesting you carry the recipe with you when serving it were right on - VERY good!

Healthy Banana Cookies
These are amazingly easy, healthy and delicious! I'm preggers and try to satisfy my occasional sweet tooth in healthy ways, and this is perfect. I did sub milk choc chips (naughty) for dates, and subbed applesauce for about 1/2 the oil. I MUST freeze theese because I can't stop eating them. YUM...Thank you!!!
