Slow Cooker Beef Stroganoff I

I wanted to try something other than my tried-and-true, very simple recipe that Mama used to make. I was SO not loving the golden mushroom thing! After the first meal, I did not eat the rest. Maybe this is what others grew up with for Beef Stroganoff, but I did not care for this. Usually I don't write negative reviews...but I don't want others misled like I was. Sorry, Jessica...

Melt In Your Mouth Blueberry Cake

Made this for breakfast this morning...I live in Utah, so adjusted recipe for high altitude, and it was THE BOMB!!!!! See the picture I took...my hubby and I devoured half of it for breakfast! Yum! I'm not a big baker, but I will CERTAINLY be making this again!

Beef Barley Stew

This is the perfect meal to warm you up on a cold winter day! Rather than add the flour at the end, I put it into a ziploc bag, added salt, pepper and garlic powder, then shook the stew beef in it. Threw it all in the pot with the olive oil and browned the beef that way, first, then added the remaining ingredients. Followed other suggestions - 2 cups beef broth and 1 cup wine. Use whatever kind of mushrooms are on sale. Used quick cooking barley - doubled up. Added a can of peas with their juice, which gave it a nice little depth. The longer you cook it, the better it is!

Broccoli Cheese Soup

Made this at TxGvg for my sister and her 4 kids (1 is a vegetarian) and it was a HUGE success! Have since made it almost weekly 'cuz it's a "quick, cheap and easy" lunch option for me. Followed other suggestions - doubled the broccoli, added 1/2 lb cheddar jack cheese and reduced cornstarch 'cuz the soup is so thick to begin with...LOVE this stuff!

Ultimate Twice Baked Potatoes

Been looking for a twice baked smashed potatoes recipe for a while. This was excellent! The only thing I'd do differently is add the bacon bits into the mixture. They were too tough when just sprinkled on top. Had them for Chirstmas dinner with Prime Rib. Mom and hubby raved! YUM!

Ham and Potatoes Au Gratin

Pretty good...but I think I've made it better... 1. Double up on the cheese 2. Use canned sliced potatoes. Eleviates the "potatoes weren't done" dilemma I read from others. 3. Add 2 cups +/- frozen mixed veggies (corn, carrots, green beans) to the ham mixture 4. Sprinkle bread crumbs on top. AND 5. USE IT FOR BRUNCH THE NEXT DAY! a) Coat a skillet with butter or butter cooking spray b) Fill half of the skillet with leftovers, so there's a 1/2" layer c) Cook on Medium heat until golden on the bottom, then flip and do the same on the other side d) I also added chopped sliced jalapenos as it was cooking on the 1st side (to taste - just to give it wang, but my husband likes it with more japs) e) when it's cooking on side b, butter the other side of the skillet and cook an egg or two on that side. f) place mixture onto a plate, then the eggs on top of that oh-my-gosh! :)

Cha Cha's White Chicken Chili

I've been making this at least monthly for the past 4 years, since I first found it on AllRecipes.com. Buy a pre-cooked roaster chicken (I like BBQ or Sam's Club flavors), remove the meat, rough chop and set aside 'til needed, then cover bones, skin, etc. in water and create broth from it while you're cooking the onion mixture. Fill a discarded bean can with the broth (it's 14.5 oz) twice and add to your mixture. Also, I only use 2 oz jalepenos, and double up on the cheese. Enjoy!
