Chocolate Covered Cherry Cookies II
These are very good. I followed the advice of another reviewer and added an extra egg to make them more creamy. I also put some frosting in the hole before putting the cherry in, then drizzled more on top after they cooled. They look great on a cookie tray!

Downeast Maine Pumpkin Bread
This bread was wonderful. I added some mini chocolate chips and, as suggested in other reviews, poked holes in the hot loaves and poured on a cinnamon, sugar and butter mixture. It also freezes very well.

Vegetarian Stuffed Red Bell Peppers
These are very good. The Granny Smith apples give them nice flavor. I would use 2 cups of water per 1 cup of quinoa though. I didn't use the mint but added a few more spices just to kick it up a bit. Overall, it is a nice vegetarian dish!
