Homemade Pancake Mix
I use this recipe all the time. I love that it has a little bit more texture to it. I also feel better about making pancakes that have some healthy grains in them - especially when the kids request the addition of chocolate chips!

Asparagus and Cashews
I thought this was really good. But I am a big fan of all the flavors in this. It was a bit messy when it was frying but I may have been frying it on too high a heat. It was really quick and easy to throw together.

Fast Apple Rhubarb Pie
This was really good. I was able to use some rhubarb that I had in the freezer. I made a crumble topping for it rather than crust on top. I am a huge fan of rhubarb so I will make this again with next year's crop!
