About this Cook
I work a full time job as a head custodian for an elementary school. When I get home I need quick and easy meals. I wish I had the energy to do more during the week. I love to try new recipes. Someday...I keep saying. I love dishes! (I'm a dish freak!) I love kitchen gadgets too! I love Jesus! I recycle. I care about the homeless people and I dream of opening a soup kitchen for them.
My favorite things to cook
I can't seem to get away from the good old standbys. Spaghetti and tacos. Quick and easy. I love chicken in just about any way it can be cooked. Lately I'm trying to incorporate more veggies and trying new veggies.
My favorite family cooking traditions
There are some good cooks and some better cooks. Yet,somehow I am self-taught. Love that Rachel Ray!
My cooking triumphs
I made my own chicken enchilada recipe years ago and it's always a huge hit. Someday I will pay attention and get the measurements so I can submit it. When I create I measure nothing, it's all done to taste. A habit I guess I'll have to work on!
My cooking tragedies
Thanksgiving! For some reason that meal makes a nervous wreck out of me! It usually turns out okay but to be honest it's not my favorite meal. I'll take seconds on the stuffing and I'm done with it. No leftovers for me!

Polish Dill Pickle Soup
I made this for lunch today. It was quite interesting. My husband likes it. My taste though is geared more toward spicy, which made this taste bland to me. I did follow the recipe very closely and I'm sure it came out just as it was supposed to. I won't be making it again but I give it 4 stars for originality and ease of preparation. Thanks for sharing.

Absolute Mexican Cornbread

Sicilian Brasciole a la Lena
This dish was very tender and was fairly easy to put together. I myself did'nt feel the flavors had a good marriage....my husband loved it though! I probably won't try this recipe again but it did spawn alot of ideas for expermentaion. Thanks for the recipe!
