Pumpkin Pancakes

These were delicious! I used a 50/50 blend of whole wheat and white flour, 2 small eggs, a bit more brown sugar and added a tsp of vanilla. The batter is thick but I had no problem once I poured it on to the griddle. I will make these again and again!

Tasty Lentil Tacos

I didn't change a thing when I made these. We really liked them and tried them with both hard shells and w.w. torillas. Hard shells were the favorite with the kids. My cooking time for the lentils was closer to 45 minutes.

Roasted Cauliflower Soup

This got a thumbs up from both my kids, which I wasn't expecting! I didn't have the flavored oil, but I think that was okay. Make sure you have enough cauliflower...my head was pretty small and I think it would have been much better with more cauliflower. We did add a small amount of shredded cheddar on top before serving.

Quinoa and Black Beans

We really liked this recipe! I did add about half of a chopped red and orange pepper each for some color and to make it more of a main dish. I am looking forward to having the leftovers cold tommorow for lunch!

Unbelievable Chicken

This was very easy to put together and everyone seemed to like it. Much better than anything you would get in a bottle with all those preservatives. It's nice to have a go-to marinade that's made with common ingredients that I would probably have on hand.

Black Bean and Salsa Soup

I had a 25 oz can of black beans to work with, so I used 1C salsa, 1C chicken broth, squirt of lime juice, and a half tsp each of cumin and chili powder. I pureed it with an immersion blender, then added 1C of corn. Easy and delicious!

Black Bean Brownies

These were so easy to whip together! The only changes I made were to increase the cocoa to 1/3C and add 1 tsp of baking powder, use mini chocolate chips and put 1/4C in the batter and sprinkle the other 1/4C on top. Definitely use the coffee...it really complements the chocolate flavor well. I will definitely make these again!

Satiny Chocolate Glaze

This couldn't have been easier! I put it in a 4 cup glass measuring cup, microwaved for 30 seconds, stirred, microwaved for another 20 seconds and added the vanilla. It was perfect on homemade eclaires.

Jay's Signature Pizza Crust

Nice, chewy crust...but not a lot of flavor. We even added herbs to the mix, so we'll double what we added. This made 2 nice sized pizzas. Next time we will try the advice to move the oven rack down lower. The crust was a little soft for our taste.

Strawberry Bread

This was deliciously different! I used half whole wheat flour, decreased the oil and sugar by half and increased the strawberries by a 1/2 cup. I sprinkled some turbinado sugar on top before baking. I would like to try making muffins next time!

Cha Cha's White Chicken Chili

I had to modify this for my family...I used only green chilis, no jalepenos, and cut the cayenne in half. I also added a can of corn (great addition!) and pureed one can of beans to thicken up the consistency. I added the cheese to individual bowls before serving.

Eggnog French Toast

I had some leftover eggnog and thought this would make a nice New Year's Day breakfast. I halved the spices and used day old french bread. Good quality maple syrup makes the flavor really come out!

Delicious Ham and Potato Soup

Great recipe! I used low sodium chicken broth, added 1/2 C corn and a shredded carrot. It could use more ham...next time I make it I will increase the ham to a heaping cup. I tossed a small amount of shredded sharp cheddar on top of each bowl just before serving. Easy and good!

Chicken Pesto Paninis

These were fantastic! I made them with a yellow onion instead of red, and I sauteed the pepper and onion in a little olive oil to soften them up. I used some foccacia from the store and slices of provolone instead of shredded cheese. A great recipe to break in our new panini grill!

Chocolate Pretzel Rings

These were a fun, easy "cooking project" to do with my kindergartener. I think the next time I make these I am going to use the waffle type of pretzel, because we had a hard time getting the kiss to spread evenly around the ring. That doesn't affect the taste, though!

Apple Butter Pork Loin

I had some apple butter to use up and this was perfect for it! I also used tenderloins and baked for a little over an hour. Everyone in the family loved it. I might have to make some more apple butter so I can make it again!

Quick and Easy Pizza Crust

This was my first attempt at making a pizza crust from scratch. We were all pleasantly surprised at how good it was! I took the advice of adding herbs to the crust (1/2 tsp basil, oregano and 1/4 tsp onion powder) and a little bit of honey. I also used a 50/50 blend of whole wheat and white flour. We made a pineapple pizza that my family of four devoured!

Best Brownies

These were just okay for us. I was looking for a more dense, fudgy brownie. We did leave off the frosting and serve them with vanilla ice cream.
