Baked Potato Skins
These were amazing! Hit of our Super Bowl party! I made them with turkey bacon, low fat sour cream, olive oil instead of veg oil. Next time I will halve the oil ingredients...I had a lot left over. I served them with seasoned sour cream (a restaurant in our area serves them this way and I was able to find a similar recipe).

Slow Cooker Buffalo Chicken Sandwiches
I read through many of the reviews and was getting a little worried about it being too salty/spicy. After cooking for 5 hours, I drained off the sauce and shredded the chicken. I only added enough of the sauce back in to make it moist...all of it would have been way too much. I also used 3 chicken breasts and 2 thighs to give it a bit more depth. It went over very well for our Super Bowl party.

Hearty Split Pea Soup
This was my first time making split pea soup...loved that I didn't need a ham bone for it. I used 4 C vegetable broth and 1 C water. I cooked it on high in my crockpot for 5 1/2 hours and some of the peas were still a bit crunchy. Also, my carrots were still not as soft as we like them...next time I will slice them much thinner.
