I love to bake. Cooking is not my passion, but baking sweet treats is something I love to do.
My favorite family cooking traditions
My favorite family baking tradition is baking Sweet Bread (an island fruitcake) and sending it to friends and family at Christmas. This was what my Grandmother used to do.
My cooking triumphs
Experimenting with different spices in my baking and eveyone liking it.
My cooking tragedies
When I first got married I was making a Flan for my husband (I did not have alot of cooking or baking experience) and I was melting the sugar in a pyrex dish on the stove... needless to say it exploded! But, I learned very quickly from that experience :-)

Banana Crumb Muffins
This was absolutely a hit in my house and at church.I took others advice and added the cinnamon to the muffin batter.I used oil instead of butter in the batter and dark brown sugar. We had a breakfast at church and that was the first thing to go. I had 2 teenage boys beg me to make more! I doubled the recipe and it made 3 batches of mini muffins and I got 3 little bundts out of it too. Baked the minis at 400 degrees for 12 min. And the bundts at 350 for 15 mins. Awesome recipe! Thanks

Bacon and Tomato Cups
Great recipe! The only difference was that I added 8 oz of the shredded swiss cheese instead of 3ozand used light mayonaise...no one knew the difference :-). I have tried this recipe about 3 years ago and used the grands buttermilk biscuits, I had difficulty with the dough. Found that the pillsbury flaky layers buttermilk biscuits worked best. Thanks for this tasty treat!

Florentine Artichoke Dip
This recipe got great reviews! The only changes I made (on the advice of other reviewers) was only using 1 tbsp lemon juice, marinated artichokes, 8 oz cream cheese, 8 oz sour cream. I chose to use the reduced fat cream cheese and reduced fat sour cream. I also used the shredded parmesan, romano, & asiago cheese instead of just parmesan, added a small jar of diced pimentos and 1 extra garlic clove. Everyone loved it!, even if it was reduced fat. Thanks for the great recipe.
