Took me a while to figure this out... Don't believe what they say, you still have to soak the beans OVERNIGHT (at least 12 hours). Increase liquid (chicken broth) by 32 oz per pound of beans. Sweat onions first in bacon grease AND add a ham hock during cooking.  (grease will red MORE
