Banana Cake VI

Gave this 4 stars as I would not make as written. I think the cooking temp is wrong. I baked 350F for 45 minutes. I did not put it in the freezer. Came out perfectly. I also substituted fat free sour cream for the buttermilk. Great with cream cheese frosting.

Grandma's Favorite Chicken

I gave this 4 stars because it would be very bland with water. I used chicken broth. This is a very plain dish and perfect for my hubby who does not like "fancy stuff" Next time I make it I will try adding Cajun seasoning to give it some zio. I was out when I made this.

I give this 5 stars with changes. I used only 1/2 c and used Miracle Whip in place of mayo. I also used 4 cloves of garlic. Very easy to make.

Orange Pecan Cookies

These are very nice cookies for Christmas. I made them into a crescent shape and dipped half in the chocolate. I used orange liqueur as well and added a bit to the chocolate. This was a mistake as it turned the chocolate hard. I added some oil and that thinned it out again and I was able to use.

Parmesan Crusted Chicken

Although I made some changes, I am rating this more for myself. I used miracle whip, personal preference. Also mixed in some garlic powder, pepper and dried basil. I then rolled the chicken pieces in the parmesan cheese. I left out the bread crumbs altogether. I had sliced the chicken breast into 4 pieces to have more coating so the cooking time was good for me. Very nice flavor, quick and easy. A keeper.

Bacon-Roasted Chicken with Potatoes

I used regular potatoes and cut them similar to home fries. They took nearly 2 hrs to cook. Bacon was still not crispy. Maybe a larger pan? I did not have adobo seasoning but went online and it seems it is mostly more of the same seasonings plus some onion powder and oregano so I made my own. I actually only used 4 legs and left the seasonings the same. This was not bad but I will not likely make it again.

Orange Curried Chicken

I loved this as did my guests. I found there was way too much water and I had used only about 1/2. I boiled up the sauce to reduce it a bit and served on the side so it worked out okay. I also increased the curry a bit, added a few grains of sea salt and small shake white pepper.

Bananas Foster II

Ah this was fantastic! Very very simple to do as well. I cut down on the butter and cinnamon just a tad. I had some amber rum from the Cayman Islands that I used with it. I also used real whipped cream instead of ice cream. Company loved it. I may try adding the cinnamon to the whipped cream next time...

Sausage Cabbage Bake

I made this for a pot luck and it went over very well. I used 1 c raw long grain rice. Browned it a bit after removing sausage from frying pan. I used a 28 oz can of crushed tomatoes and 1/2 c water. Cooked in slow cooker on high for 4 hrs. Still found it a dry so I added 3/4 of a 28 oz can of diced tomatoes. At this point I felt it now needed more spices so I added again the amount for worchesteshire sauce, bronw sugar and a dash of lemon juice.

We quite enjoyed this. Used only 1/2 the amount substituted miracle whip for the mayo. Also added about 1/2 tsp of white pepper to give it some zing. Next time I will try adding a bit of curry powder.

Mid-Eastern Chicken Thighs

I used only 4 thighs and the full recipe for the sauce. The trick is to turn the heat up at the end of the cooking time and reduce the liquid until it is the consistency of bbq sauce. Sauce is full of flavour this way. I also added just a few grains of salt to help bring out the flavor but would not bother next time as reducing the liquid is enough.

I increased the lemon juice by about a tbsp. Also through in a few dashes of white wine while cooking and reduced liquid. I substituted snow peas for the asparagus. Used fresh mushrooms as I would never used canned. Also left out the water

Curry-Chutney Cheese Mold

A friend had given me a jar of home made chutney and I was looking for ways to use it. I made 1/3 of the recipe and it was plenty for an appetizer pot luck. I did not have the peanuts and it a was fine without but I would definitely make a point of putting some in next time! Got rave reviews just the same!

These were very tasty. Next time I would only use 1/2 tsp of vanilla and increase the lemon by 1/2 tsp. Vanilla was a bit strong

West African Chicken Stew

I had thought I had coriander but did not. It would have helped this recipe. I added a touch of lemon pepper and chili powder to try to offset the missing coriander. I also added a can of chick peas which worked well. Hubby didn't stop at the store so I had no spinach. All in all, recipe was very good. I did not add potatoes and put stew on top. I will make again once I get some coriander.
