Jambalasta

Just a few changes. I wanted more vegies so added a grey and a yellow zucchini and some mushrooms. I used 1/2 the recipe and it will feed 3-4. I used fresh garlic. Substituded 8 on can tomato sauce with a 1/2 fresh tomato as I didn't want to open a large can of tomatoes. I would like it a bit spicier.

Flapper Pie I

This pie was excellent! I added a tad more cornstarch as recommended by other users. Will make again. I am not even a cream pie lover! The almond in the meringue sets this off as special!

Banana Walnut Cornbread

Made just a few minor changes. Used an egg as recommended. Also used white flour. Baked 50 min in a loaf pan. Sliced up without problems. I like the less sweet taste of this loaf. When making it again I would add a bit of salt to the recipe and try the whole wheat flour.

If you like this kind of salad, try the Mexican Bean Salad, has a bit more zip to it. I have made it several times and always goes over very well.

Rhubarb Bread I

I made a few changes. Cut down sugar to 1 cup. Added an extra cup of rhubarb. Used a bundt pan. Cooked an extra 15 minutes because of the pan. Did not use topping. Very very moist!

Sour Cream Rhubarb Pie

This pie got rave reviews. Just a few changes. I was making a large pie for a group so used a quiche pan. Used 4 cups of rhubarb and one extra tbsp of flour. I was out of white sugar so used brown for the topping which is what I usually use anyway. Baked about 8 minutes longer because of the extra rhubarb

Rhubarb Coffee Cake

Could use more rhubarb but was well enjoyed as it was. Kept moist over a week! I might try using 1/2 white sugar as I feel the brown sugar hides the rhubarb flavour.

Bodacious Broccoli Salad

I have been making this recipe for quite a few years now and always love it. The pepper amount is way too much and I love pepper. I use about 1/2 tsp. Even my son who hates broccoli will make this salad for himself. I always take the extra time to cut the broccoli into tiny pieces. I also peel the stock and use it as well it is worth the trouble. Keeps several days.

Cornflake Macaroons

Great cookie. Crunchy and chewy together. Next time I think I will add some chopped apricots, seems to hint of that flavour as they are now. They do flatten out quite a bit and will look like a regular cookie after baking

Nutty Lemon Coffee Cake

I made this in a bundt pan and put the mixture in the center, carefully spooning the second batter over top. I did not want to use lemon extract so I used fresh squeezed lemon juice doubling the amount. It was a hit. I had also drizzled icing over it to give it some flare.

Peanut Butter Oatmeal Cookies

I cut the recipe to 24 cookies as I thought this was too large a batch for us. Peanut flavour came through just fine. This may have changed the consistancy somewhat. I thought they had great texture and flavour! I also added raisans and then come chocolate chunks to the second round in the oven and got well over 3 dozen average size cookies.

Herbed Cream Cheese With Scallions and Tuna

This is an excellent quick recipe! Great when you need something quick and have "nothing" on hand. It was great as it was but I generally like spicy. Next time I might try a touch of cayenne pepper. I served it with larger round crackers and formed it into a cheese ball shape.

Pineapple Cheese Ball

I used non fat cream cheese and the ball was indeed very soft but excellent for spreading. I put the nuts on saran wrap and molded the nuts around the ball and refridgerated it. I am from Canada but made this in the US. The cream cheese in Canada is must thicker and I am sure that the recipe would have turned out a bit more solid there. Got rave revies on the flavour and as it was it spread very well.

Broccoli and Sausage Cavatelli

I loved this recipe. I did not have olive oil and used a regular vegetable oil and it was fine. Loved the garlic flavour! Also the pepper flakes give it some punch. I am not a fan of cream or tomato sauces so this hit the spot!
