About this Cook
I've been married for almost 9 years and have two young boys that I stay home and care for. I had absolutely no cooking experience when I got married. Seriously, I could mess up Hamburger Helper!! Since then, it has certainly gotten better and this website has been a great contributer to that.
My favorite things to cook
Anything new that sounds delicious! I especially love fall foods like soups and roasts.
My favorite family cooking traditions
As a kid, my family really loved Dutch oven cooking and I still love it now. I am only beginning to learn how to do that though.
My cooking triumphs
I like to cook for others (although it sometimes stresses me out), but my triumphs are when I please someone's taste buds with a recipe I have made. It is always a great feeling for me.
My cooking tragedies
Oh there are so many:) I did mention I had no cooking experience when I first married. My poor husband. He is my guinea pig. Our first year of marriage I kept cooking a beef stew that he never liked, but he didn't tell me for months because he didn't want to hurt my feelings. Ha! Ha! Well, he knows better now and I look forward to his feedback when I try a new recipe although he is SO picky. I continue to mess up sometimes, but I learn from it and I believe that is what makes me a better cook.

Rhubarb Berry Jam
I was so skeptical of this recipe when I found it here, but there were not a lot of options for rhubarb jam that didn't require strawberries or oranges and I was in desperate need of using up all the rhubarb overflowing in my kitchen, plus I happened to have all the ingredients on hand. It has been in my freezer for a few months now and each time I would pass it by and opt for our raspberry jam, but today I decided to try it. When I opened the jar, it still didn't look too appetizing, but looks can be deceiving. I thought this jam tasted great! It is sweet with a tiny hint of tartness. I will be keeping this treasure in my recipe box for the next rhubarb season.

Broccoli Chicken Roli
I don't really like the taste of cooked mayo so I used cream cheese instead (did use a TB of mayo to thin a bit). I also didn't use the green peppers and opted for garlic powder in place of minced garlic. On accident I forgot to include the Cheddar cheese, but it didn't really need it because I was using cream cheese. This turned out really pretty and my husband and I both thought it was good. Even my boys (7 & 5) ate this. This really would make a great appetizer as it has great presentation qualities and serves many people.

Rick's Special Buttercream Frosting
I used half butter, half shortening and followed the tips of JOSELYN. This is a delicious frosting with a great consistency. I would rate this 5 stars if it didn't have to be refrigerated, but when I have room in my fridge for a cake this will be my number 1 frosting choice!
