I am a business instructor at our local community college. I have 2 children. I have been married to my husband for 13 years. I love to cook!
My favorite things to cook
My favorite things to cook are homemade pizza, breakfast, pasta dishes-lasagna/spinach manicotti/chicken parmigana, and desserts.
My favorite family cooking traditions
Growing up my mom cooked a big southern meal every night...I mean everything was fried! I just can't do that. My husband and I try to eat healthy and keep the frying to a minimum. We like to cook together. On the weekends it is a treat for us to cook a good dinner. I make the side dishes and dessert while he mans the grill. This is a weekly tradition most of the year (except when it is just too cold). During the Christmas season I make peanut butter balls and coconut bon bons every year.
My cooking triumphs
My husband's mother did not cook when he was growing up, so he is not too difficult to impress! I love it that he says my cooking is so great. It's also nice to hear my kids say "your cooking is better than MawMaw's."
My cooking tragedies
When my husband and I were first married, I made a meatloaf for dinner. My mom always cooked hers in the microwave, so I was going to do the same. I guess I cooked it too long becuase it turned out to be hard as a brick! We laugh about it now everytime we have meatloaf.

Salsa Chicken
This recipe was okay but nothing special. The chicken was tender but too much salsa...it overwhelmed the flavor. I probably will not be making this again.

Baked Potato Skins
These were great, and not too much trouble. Just have to think far enough ahead to bake the potatoes. I did not have any parm cheese so I had to leave that out of the recipe and I used olive oil in place of vegetable oil. They were great! Will definately be making them again.

Mound Bars
These were excellent and very easy to make. Will definately be making them again. Might even add them to my Christmas candy list:)
