Oven Fried Chicken IV
YUM! I never knew of a good way to cook chicken, except cut up in a stir fry...until now! It was delicious and the whole family liked it. My husband said to make sure I save this recipe! I used boneless skinless chicken breasts and they came out perfect. What a great idea to use a cooling rack - kept the breading on the chicken and not the pan. I also liked the idea of using low fat sour cream instead of the mayo that some recipes call for. I used the herbs/spices listed plus thyme, paprika, and Season All. This is definitely a keeper. Thanks!

Szechwan Shrimp
This recipe was good, but I was a little disappointed. I kept tasting the ketchup. I will probably try this again (because I really like shrimp dishes) and try tweaking the measurements.

Awesome Roast Beef
The title says it all! This recipe IS awesome!! There are 3 in my family, so just a 1 lb roast was plenty - no leftovers though, so maybe next time I'll go bigger :-) I put big slices of onion in the crockpot first, seasoned the meat with season all, used half a can of beef broth, and half a can of cream of mushroom soup. No water. I also sprinkled about half a pouch of dry onion soup mixture on top. It was so good! My husband and son both loved it too (nice when everyone is in agreement!) I served it right on top of white rice. It made lots of sauce to pour over the rice too. I will definitely make this again!
