About this Cook
Used to work as a children's illustrator, now I'm a stay-at-home wife soon-to-be mama! I am not much of a cook but would like to be. Now that we are expecting a baby I am trying to get better with the "home arts" and have found a lot of exciting recipes on this site.
My favorite things to cook
easy! :-) things that don't have exotic, hard to find ingredients, yet are tasty and healthy. Hubby is a Marine and always concerned about staying in shape and eating healthy.
My favorite family cooking traditions
my dad's family is from the South - very traditional Southern cooking. Mom's family is from SoCal - I grew up eating lots of Mexican food and loving it!

anytime a new recipe comes out edible.
My cooking tragedies
Well, there's a lot...There was the time I tried to make fortune cookies - couldn't even roll out the dough it was so hard. I had all these little slips of paper with my "fortunes" I had all printed out and cut and ready to put in my cookies! I was SO disappointed!

Lemon Rosemary Salmon
simply delicious! I made this along with french bread and a wild rice mix and green salad, and it was SOOO good and SOOOO EASY! For sure this recipe is a keeper.

Baked French Fries I
these were very tender and yummy but bland! I seasoned the fries just like the recipe said and although they LOOKED and SMELLED wonderful they did not have much zip. Next time (I WILL make them again - it's a good recipe) I will add more spices and salt.

Erica's Delicious Slow Cooker Beef Roast
hubby liked it; I put in onion soup mix as some of the reviewers suggested and I didn't care for the onion flavor. I think it would have been better w/out the onion mix added. the roast was wonderfully tender and the gravy was yummers!
