Fruity Acorn Squash
This was a great sidedish! I added just a bit of butter to the apples, celery and brown sugar and micorwaved the filling just a bit before adding into the partially baked squash. I was serving it with roasted pork loin so I wanted to do it in the oven. It made a big hit and was just as good reheated later in the week. I'll definately make it again!

Shrimp Fried Rice II
Very easy recipe. I altered the recipe just a bit by adding in mushrooms, carrot slivers, mini corn, waterchestnuts & bamboo shoots. Also I left out the beansprouts. The flavor was a bit to salty despite the fact that I used low sodium soy sauce. Next time I'll cut it down to 2T soy during the cooking and add more upon serving if necessary. Also, next time I'll cook the egg separately and stir in at the end as I feel that it made the dish to sticky and we like a fluffier rice dish.

Swiss Chicken Casserole II
Wonderful flavor and simple to make! I followed a couple of different suggestions from other reviewers and used a semi-dry white wine instead of milk and chicken Stovetop mixed with melted butter. We, as well as our dinner guests loved it! I'll definately be making this more regularly.
