About this Cook
My favorite things to cook
I don't have a favorite. I'm always open to trying something new. I decide what ingredient I want to work with and go from there.
My cooking triumphs
My latest has to be cookies. My father-in-law is in his eighties, having some health issues and I know he likes cookies. I spent the entire day before his birthday baking homemade chocolate chip, oatmeal raison, peanut butter, and white choc macadamia nut cookies. They were a big hit with the whole family that visited that day.
My cooking tragedies
I can't remember any particular one. We all have them. I put them out of my mind and move on.

Festive Cherrettes
These were great; they just melt into your mouth when you bite into them. Not real sweet, but the cherry blends in the sweetness. Excellent flavor. Next time I will try a whole cherry (only because I love them). My aging father-in-law ate several of them, he loves it when I bake cookies, so I try to bake different cookies every weekend or two.

Cranberry Orange Breakfast Bread
I have been wanting a good fruit bread recipe. This is it. I don't usually make changes on the first time;I did on this because I was working with what I had in my pantry. First, I cut the spices in half, I like to taste the fruit more than the spices. I used mixed fruit, honey roasted almonds, and lemon zest (I order lemon zest and keep it on hand in the fridge, I used 1-1/2 tsp. because I knew it would be a stronger flavor than the orange zest.) Also, because the comments were made that it was a dense bread, I made it into 3 small loaves (I do not use a breadmaker) which gave it the ability to rise better. I can't wait to make this again as the recipe is written, except I will use lemon zest again and cut the spices in half. This bread is wonderful, toast it and you don't need to put anything on it, it is moist from the fruit. It has received many compliments.

Chocolate Toffee Cookies II
I'm very picky about my cookie recipes. My husband and I like them crisp.I considered not using the rum, but I did.I thought the flavor might be a little too much, but it was great. These were very good cookies and I wouldn't change a thing.
