Tomato-Curry Lentil Stew
Yum! I added carrots and a sweet potato that needed to be used and both were great. I doubled the curry powder and added 1/4 tsp garam masala and 1/4 tsp coriander as well as some red pepper. Definitely needed a little spicing up! At the end, I took 1/3 of the stew and blended it in the food processor with some sour cream then added it back in. Makes for a wonderfully creamy, more soupy consistency. I think you could add just about any veggie to this easy base recipe for a yummy hearty stew...very flexible. Will definitely make again.

Moroccan-Style Stuffed Acorn Squash
Very good, but needed a bit more flavor. I added 1/2 tbls of garam masala and pinch of cayenne pepper for some heat and that was perfect. I microwaved the squash as suggested by another reviewer and it took only 5min each half. Next time I would add more carrots and celery and fewer garbanzo beans. Very quick, heaty meal, will definitely make again!

Chicken Diane Style
Very easy, very flavorful. I did add some corn starch at the end to thicken the sauce a bit. Served with buckwheat instead of rice, which went really well - soaked up all the good sauce and added a hearty texture!
