Eggplant Parmesan II
easy and yummy, I was too lazy to peel, cut up the eggplant into pieces and sweated them with kosher salt for 10 minutes before putting them into the oven as people had recommended. Came out great! Also diced an onion, sauteed it, and added it to a tomato sauce layer, which gave it a nice flavor!
