About this Cook
I am a stay at home mom with a fabulous 2 yr old son and. I love to cook and made a NY resolution to expand my recipes and have fun preparing and cooking for my husband and son.
My favorite things to cook
Oh wow, I love to cook pasta dishes. My fav is a Rachael Ray recipe, Pumpkin and Sausage Bowties.
My favorite family cooking traditions
Clam Chowder. My mom makes the best chowder. I should share the recipe!
My cooking triumphs
About 2 yrs ago I hosted a dinner party for 8 ppl, it was my first attempt at gourmet cooking and it turned out great! I served prosciutto stuffed chicken, au gratin potatoes, salad with cranberry vinaigrette topped with apples and blue cheese (recipe courtesy of allrecipes!) treasure cakes with raspberry topping.
My cooking tragedies
Doh, so many. I cannot seem to get linguini and clams right. Recently, I tried to cook fresh Sole. yuk!

Baked Chicken Reuben
I wasn't sure about this dish. I love reuben sandwiches but I was unsure how the sauerkraut would taste on baked chicken. I am SOOO glad I made this! It was delicious! So moist and the flavors came together perfectly! I, like the others, only cooked for 60 minutes at 325. Used provolone instead of swiss. Will definitely make again!

Lyn's Chicken
Very easy and tasty chicken! I like a little more flavor so I marinated the chicken breasts in teriyaki sauce for two hours. The sweetness of the sauce really compliments the cheese and mushrooms.

Chicken Teriyaki with Asparagus
I love, love, love this dish! It's so simple and delicious. I used green beans last night and was just as good! Make sure you poke holes in the chicken before your pour marinade over it, really gives it good flavor!
