Lentils and Rice with Fried Onions (Mujadarrah)
Amazing. My husband gets suspicious when I make dishes that he either can't pronounce or that don't include meat, but he had to admit he loved this one! I loved it, too. I added 1 T. cumin and a veg. boillion cube to the water while cooking the lentils and used 4 onions. I also just used a whole bag of brown lentils and just covered it with water.

Chicken Nachos
Very good. Used canned shredded chicken (Sam's Club chicken is great), mixed it with a can of Rotel, pinto beans, and cayenne. Heated it up in microwave, then layered it in a casserole with corn tortilla chips and cheese, and baked for 10 minutes. It needs the toppings, as it is dry on its own. I used the Baja Sauce recipe from this site because I was out of sour cream, and it turned out great.

Baja Sauce
Yum! I made this super easy on myself by defrosting part of a bag of frozen onion/bell pepper mix, throwing in several slices of jalepeno from a jar, and mashing it with my potato masher. Estimated the mayo, vinegar, and spices, and had a terrific sauce in minutes. My husband, who loves Taco Bell Baja Sauce, said something is still different, but that this is great. He said, "Now all you have to do is figure out that Bloomin' Onion sauce." Thanks for the recipe - we were thrilled.
