Eggplant Parmesan
Be sure to slice the eggplant thin enough or you'll only have enough to do one layer instead of two. I really enjoy the taste of this dish, but mine came out a bit a mushy. Next time I'll follow the advice of another reviewer and salt the eggplant a little, and maybe the tomatoes so its not as juicy. I will make this again!

Nutty Granola II
Fantastic granola recipe! I may never go back to the boxed stuff. This recipe is great as is and as a base for getting creative. I added flaxseed and swapped dried cranberries for the regular raisins. I can't wait to try this again with molasses...

Creamy Potato Leek Soup II
This recipe is super easy and yields tasty and flavorful results. I was on the couch slurping it within 45 minutes. The potatoes I had on hand were a mix of gold Yukon and purple Yukon. The purple potatoes made the soup look funny in color, but the sneaky anti-oxidants make up for it. Like other raters, I subbed milk for cream to cut back on the fat. I will make this again and again.
