Eggplant Parmesan
Be sure to slice the eggplant thin enough or you'll only have enough to do one layer instead of two. I really enjoy the taste of this dish, but mine came out a bit a mushy. Next time I'll follow the advice of another reviewer and salt the eggplant a little, and maybe the tomatoes so its not as juicy. I will make this again!
