Scottish Shortbread III

SO EASY! I opted with the stand mixer and really whipped the butter and sugar before adding the flour. It came together wonderfully and simply patted it into the parchment lined pan. I also added a little almond extract. I thought the cookies wouldn't be sweet enough, but after tasting a few and especially with tea...they were perfectly sweetened. If I needed a sweeter treat, I would probably dip in chocolate. They went over well at the food tasting that I took them to.

Anthony's Lime Chicken with Pasta

Awesome! I loved this chicken! I added more parmesan to the crumbs, I used a little more butter in both recipes. I also used the bottled lime juice. I will make this a regular! Thanks!

Instant Chocolate Oatmeal Cookies

AH HA! Oatmeal cleverly disguised in chocolate! My youngest daughter "hates" oatmeal, I had her read the recipe while she was licking the spoon. I had no problems with the cookies setting up, instead of nuts, I added 1 cup of semi-sweet chips with the oatmeal. They melted right away into the mixture, but it still turned out great!

Parmesan Chicken I

Cha Cha's White Chicken Chili

This chili is awesome! I have brought it to a few school functions and earn rave reviews everytime. My modifications are: adding an additional can of chilies and sauteing long enough to get the heat into the chili, I also add the jalapenos in the last stage of simmering to keep most of the heat down, oddly enough. My beans are also 1/2 drained in the can to keep some starch in the chili, but not too much. Finally, I serve jalapenos on the side for those that want it.

Brownie Caramel Pecan Bars

This is THE best dessert that I have ever made, and I've made a lot of desserts! I doubled the recipe and baked them in a 11 x 15 just 2 minutes or so longer. I also used margarine in the recipe and heavy cream instead of milk in the caramel sauce. I took them to our first PTA meeting of the year with rave reviews. They are time consuming to make, which is nice only because you won't be able to eat too many of them, too often. Fantastic!

Baked Pork Chops I

Thin Mint Cookies

After our cookie sales had ended, I gathered our GS troop for this homemade version. I had some cookies prepared in stages, so the girls could do each part of the process. We then did a taste test of the GS cookie and our own, all the girls voted that they preferred the homemade version! 10 thumbs up!!!

Quick Sourdough Bread

Broccoli Chicken Casserole II

I used fresh broccoli on the bottom of the 9x13, and layered sauce and chicken and topped with sauce. I also omitted the curry (ran out) and used a dash of cumin, dried minced onion, pepper and paprika. I think next time I won't heat the soup concoction either. My husband gave it a thumbs up on the "wild turkey surprise" meter. (That's what it's called when we try something new!)

Banana Banana Bread

I added 3/4 cup milk chocolate chips to the batter. BUT I couldn't find my loaf pan, so I used a 9" square and baked it for an hour. I then melted the rest of the bag of chocolate on the hot bread/cake. The flavor of the "bread" is wonderful, it's moist and not as dense as I remembered banana bread to be.

Amish White Bread

We've moved from the Tri-State area, but we love Stroehman's Dutch Country Potato and we can't get it here on the West Coast. My 7 year old daughter swore up and down this was the bread we used to have in NJ!

Absolutely Excellent Oatmeal Cookies

I loved that the cinnamon wasn't too overbearing, but I did add a 12 oz. bag of mini semi-sweet chocolate chips. My kids had no idea these were oatmeal cookies...they "don't like" oatmeal cookies :) These kept well too and stayed nice and soft for over a week!
