Cabbage and Kielbasa

Rather than draining the can of potatoes, we used that for the 1/2 cup water. We also added sun dried tomatoes, including the olive oil. Worked out great. Great recipe!

Mississippi Mud Pie II

We didn't even make this right and it was still fabulous! We used a 9" graham cracker crust from the pantry. Without the chocolate pudding, we threw banana and lemon pudding together. If you're looking for something high in calories and low in food value, this is IT!

Chicken Jambalaya I

If you've got lots of stuff and little time, this recipe is for you! I didn't have bell peppers, so I used baby carrots. I didn't have a 14.5 oz. can of tomatoes, but I did have two gargantuan tomatoes from the garden. Threw it all together. Cooked one cubed chicken breast in Chef Prudhomme's cajun spices (just a pinch) and, I kid you not, this was ready in under 30 minutes! Do yourself a favor! Double the servings and enjoy!

Asiago Sun-Dried Tomato Pasta

If there's food in heaven, this will be a main course. As a beginner, making this dish was a challenge. Having successfully made it, not only am I no longer a beginner, around my house, I'm The Man! Put this dish on your Bucket List!

I use Kikkoman bread crumbs instead. This is great whether you use regular catfish fillets or Basa.

Shrimp and Caper Salad

My 1st recipe using capers. Wandered around trying to find capers in the grocery. What IS a caper anyway? But my wife wanted this, so I found the capers and made the dish. Still have no idea what a CAPER is exactly, but the dish was very good. Seriously though, what IS a caper?

Awesome Sausage, Apple and Cranberry Stuffing

This recipe has now become our family holiday standard. I hate to admit this, but for Thanksgiving '08 I made this for the first time. I inadvertently added 2 1/2 TABLESPOONS of sage instead of 2 1/2 teaspoons. My family STILL loved it!

Angel Hair Pasta Salad

This is a great 'foundation' recipe. I took advice from others and used bow-tie pasta, caesar dressing, 1/2 cup EVOO, 1 tomato and 1/2 cucumber. Sprinkled 1 tbsp of Bay Seasoning. Big hit.

Lemon Herbed Salmon

WARNING! This dish may result in uncontrolled pigging out! It's that good. I made this and some buttered squash. My wife is still unconscious, but I managed to get the kitchen cleaned up before succumbing to moose tracks overdose. This is a great dish!
