Stuffed Cabbage Rolls
This sounds just like my mother-in-laws recipe - although she added water. One great suggeestion that saves a lot of time.... Just chop the cabbage into large chunks, put them at the bottom of the pot; turn the filling into meatballs, place them on top and then add the liquid. Don't stir until the meatballs 'harden' a bit. All the same flavors without the time.

Banana Crumb Muffins
Very, VERY good. I added 1 tsp. vanilla & a shot of nutmeg to the batter and doubled the topping. Perfection. note; I only got 6 large muffins out of the recipe.

Carrot Cake III
awesome! Used 1/2 cup less oil but replaced it with a jar of carrot baby food. Added cup of coconut (will put it in the food processor next time as the coconut 'threads' were distracting). The icing does not need nearly so much sugar...I used half the amount and it was fine. KEEPER
