About this Cook
I've been married to my wonderful husband for 8 years. We have 3 children, ages 5, 3, and 1. We live in Las Vegas (yep, people actually live here), but lived in Texas for 5 years. We moved to Vegas to start a church, and it's been going great! We have family in town, but we're always meeting new people. Having folks over for a big home-cooked meal is a great way to have fun and get to know one another.
My favorite things to cook
While living in TX, we ate ALOT of Mexican/Tex-mex food and now we can't live without it! I also love to cook Mediterranean-style meals. Anything that is grilled/broiled with lots of lime and cilantro will be a favorite of mine.
My favorite family cooking traditions
My mom and I would always bake pies Thanksgiving morning while watching the Macy's parade on tv... Even though she lives far away, I still do this and now I've been letting my daughter help.
My cooking triumphs
I made the best apple pie in the whole world, last year. Maybe it was just a fluke, but it seriously was the best I'd ever had!
My cooking tragedies
I got this recipe for chicken fajitas from an authentic Mexican cookbook. I followed the recipe exactly, but somehow they turned out sooooo nasty. My husband ate them anyway, pretending to like them, but I refused. I was so mad, they seriously took way longer than the quick kind, where you just add fajita seasoning. Never again. (I'm still a little bitter)

Yellow Squash Casserole
I've made this many times, it makes a great side dish! The only thing I changed was adding corn. You can pour frozen corn in the pan when you're heating the squash. Very good!

Best Brownies
Definitely the BEST!!! I took others' advice and carefully mixed everything by hand, making sure I beat the eggs in a separate bowl first. I threw in some chocolate chips, but I don't think the brownies even needed them! I also can't comment on the frosting, I didn't make it. To me, frosting just ruins brownies--a good brownie doesn't need frosting! Thanks for the recipe, Angie!!

Artichoke Chicken
Not only did this smell and look great, but the taste was outstanding. I wish I could give it at least one more star! I took the advice of other reviewers and slightly cooked the chicken first, put a little mozzarella on top, and added spinach and fresh garlic (instead of dried). But I can tell that even without the changes, it would still be fantastic! Since there was plenty of topping/sauce we served it over pasta with a side salad. Made a wonderful saturday night dinner, and the whole family like it! Thanks Lisa!! P.S. I used light mayo with no problems whatsoever!
