Artichoke & Spinach Dip Restaurant Style

Delicious! I followed the recipe exactly, except for using a whole 8 oz pkg of cream cheese instead of 1/2. I also heated it through in a 1.5 qrt crock pot - easy way to keep it warm through a holiday party. Guests loved it!

Teriyaki Chicken

Good basic chicken recipe. Definitely needs to marinade MORE than 3 hours. I punched holes in boneless skinless chicken breasts to help the meat inside soak up the marinade. Next time I'll try thickening the marinade after cooking to use as a sauce.

Crustless Spinach Quiche

Good base recipe. I cut it down to 2-3 servings. I sauteed 1/4 cup chopped onion and a small can of mushrooms in olive oil, then added about 1/4 pound of fresh baby spinach until wilted. Mixed with 2 beaten eggs, 3/4 cup shredded cheddar cheese, S & P, and some dried basil and oregano and baked for 20 minutes. It made a nice breakfast with sausage links and fresh fruit. Next time I'll add some cooked bulk pork sausage to the mix before baking to make a one-dish breakfast!

Grilled Cheese with Tomato, Peppers and Basil

I enjoyed the flavor of this sandwich. I used sweet bell peppers, but adding jalepeno would really add that extra kick the sandwich needs. Don't be afraid to use a bit more basil...it adds a lot of flavor too.

Balsamic-Glazed Salmon Fillets

Easy and satisfying! I made this for a friend of mine who is an extremely picky eater - and he loved it! I substituted dried oregano for fresh (don't skip this part - the oregano adds A LOT of flavor). I suggest doubling the glaze and reserving some for dipping.

Hot Ham and Cheese Sandwiches

Tasty and simple! I used onion rolls for the buns and omitted the chopped onion and poppy seeds. Thick-sliced ham also makes it a hearty sandwich. A nice change from plain hot ham and cheese.

Portobello Penne Pasta Casserole

This pasta is a great option for those vegetarian dinner guests. I served it as a side dish with sliced beef and glazed baby carrots. I used low-sodium soy sauce for fear of it being too salty; however I would recommend using regular soy sauce or adding some garlic salt for some kick.

Broiled Tilapia Parmesan

This recipe is super quick and easy and not short on flavor! I followed the recipe as is and wouldn't change a thing. Be sure to let the cheese mixture brown - it really brings out the flavor. This fish made a beautiful presentation alongside streamed broccoli and homemade rolls.

Six Can Chicken Tortilla Soup

Super easy and full of flavor! I used the suggestion of substituting one can of broth with cream of chicken soup. I also sprinkled a four-cheese Mexican blend and crushed tortilla chips on top. The leftovers froze well too.

Candied Garlic Chicken Wings

This was by far the best wing recipe I have come across! As a college student living a dorm, I'm always looking for easy and delicious recipes with few ingredients, and this one fit the bill. I marinated the wings for a full 24 hours, and the meat turned out very moist and flavorful.
