Snickerdoodles I
I made these tonight and although they tasted okay, they were really greasy from the shortening. Still searching for another recipe, but with a few changes, this one could be a lot better...especially decreasing the shortening.

Flourless Peanut Butter Cookies
I can't say that I was happy with the turn out of these cookies, but I really was excited to make them. I doubled the recipe (2 cups sugar, 2 cups peanut butter, and 2 eggs). For the first batch, I pressed them with forks and when I pulled them out, they had flatened completely and were still gooey after 15 min. For the second batch, I put them in a mini cupcake pan and that seemed to help. Both batches may not look great, but they look edible. I did try them and I have to say that there is way too much sugar in them...to the point that I feel like I'm just eating a spoonful of sugar. I want to try this recipe again, but will definately cut the sugar in half and beat the eggs and sugar together first. I do live in Colorado, so the altitude, minus flour, may have given me a bit of trouble.

Cheesy Ranch Potato Bake
I loved this recipe, but wanted to make it a main dish for dinner, so I changed it a little. I lessened the chili powder to 1 1/2 teaspoons and added 1/4 teaspoon paprika. I also added 2 teaspoons garlic. I omitted all the butter, but added 1 1/2 tablespoons of Omega-3 oil (nutritious and prevents any sticking). After cooking the potatoes, I used Annie Cowgirl Ranch Dressing and added 1 package of Lightlife's Smart Ground Veggie Protein. Turned out great. Next time, I may add some jalapenos or hot sauce and try fat free cheese.
