About this Cook
I am married with two picky eaters. I have been trying to expand our dinners to include some more interesting meals that are budget and family friendly. I am a stay at home mom so I have plenty of time to cook.
My favorite things to cook
i like to cook seafood- scallops and shrimp mainly, but I cook many different things all the time. I am not good at baking if it doesnt come from a box. I do not do leftovers and cook from scratch most nights. Dinner time is the most important time of the day for this family.
My cooking triumphs
I created a recipe for a pork tenderloin ( by created I mean that i did not use any help I am sure thatI wasnt the first to try it) It was a real success for me. Gravy and all. Not bad for a Tuesday dinner.
My cooking tragedies
I have way to many to list here, but I shall keep trying and if I fail there is alway takeout for the night.

Shrimp Bisque
This was really awsome wanted to try out a soup to go with our Thanksgiving meal so I made a small batch for dinner one night. WOW!!! Lowed the low fat quality, did not put the soup in a blender just gave it a good stir and served it! Sauted a few extra shrimp to add on top.

Egg in a Hole
I made this a few days ago when I was looking for a change for dinner. I used 12 grain bread and used non-fat butter spray on the bread to make it a little healthier for us. We still made the bacon on the side well drained and I sprinkled a little cheddar cheese over it for added flavor. We really enjoyed this and it was a nice change from basic eggs!

Stuffed Peppers
We do not like green peppers. I was looking for something different to do with ground beef so when I found this recipe I thought why not. My husband was not in favor of the meal until I showed him the recipe. When all was eaten ( it was really all gone) he said that this meal was a keeper and to put it in my meal rotation. I did not make many changes and I kept snacking on the unused filling!
