Vanilla Crepes

Reviewed: Jul. 9, 2009
Very good crepe recipe. I was so glad that the crepes didn't stick to the pan. For the filling, I used 4 oz cream cheese, 4 oz sour cream, 2 T sugar, 1/4 tsp vanilla, 1/2 can of blueberries (10 oz), and 1 tsp lemon juice (all measurements are estimated). Threw everything in a small food processor, filled crepes, and topped with a sprinkling of powdered sugar.

This was ok but I thought it was a bit bland. I used homemade cream of chicken and had to substitute cream of wheat for Malt O Meal.

Fresh Tomato Salsa

Reviewed: Jul. 8, 2009
Very good salsa. Next time I'll use 1/2 a pepper and make it more chunky. ***UPDATE*** The second time around, I did make this salsa more chunky and it did taste a lot better. Also, I served this on "Lime Chicken Soft Tacos." The taste was ok but I prefer the "Cilantro Serrano Cream Sauce" over the salsa with the tacos.

Jen's Fresh and Spicy Salsa

This tasted great. I only used 1 pepper and a couple of swigs (maybe 1-2 tsp) of Tabasco for kidlet's sake. This will come in handy when the tomatoes start to ripen.

Beef and Bean Chimichangas

Not what I expected. Maybe if I played around with the ingredients (omit the corn and increase the ground beef and beans), it will have the taste that I desired.

Amy's Cilantro Cream Sauce

Reviewed: Jul. 8, 2009
Loved it! I used "Salsa De Tomatillo" to make this recipe. Before adding the cilantro, I tasted the dip. It was really good. After adding the cilantro, the dip was ok but not as good as without the cilantro. 4 stars with cilantro. 5 stars without the cilantro.

I used only 1 jalapeno pepper for kidlet's sake. Tasted recipe as is but made the salsa for "Amy's Cilantro Cream Sauce." Perfect match.

Tomatillo Salsa Verde

I made as written. It was a little too watery for my taste but tasted great. Next time I'll boil tomatillos, drain water, and then puree everything.

Homemade Noodles

Reviewed: Jul. 7, 2009
This was a very tasty noodle recipe that I used to make lasagna noodles. I did have to add some water to the mixture because I was unable to roll it out. I increased the recipe to 6 servings to make 3 large lasagna noodles. I let them dry for about 3-4 hours. Then I cut each in half to fit in the pot, boiled, and let cool. Lastly, I used the "White Cheese Chicken Lasagna" recipe.

White Cheese Chicken Lasagna

Reviewed: Jul. 7, 2009
THIS LASAGNA WAS GREAT! The only drawback is I would like to make the sauce mixture a little thicker next time so its not so messy. I used "Homemade Noodles" to make the lasagna noodles. Also, I used about 2 fresh basil leaves, about 10 small fresh oregano leaves, and doubled the fresh parsley. I didn't have frozen spinach so I blanched about 24 oz of fresh spinach and drained it VERY well. Served with "Grilled Asparagus".

Creamy Pork with Sour Cream Sauce

Found some pork cube steaks on sale so I decided to try this recipe out. It was really good. I used homemade cream of chicken and used fresh unseasoned bread crumbs because I forgot to add some herbs to it. Served with "Grandma's Noodles II" and roasted root vegetables.

VERY GOOD QUICHE!!! I added some tomatoes on top. Also, half the quiche I put in a preformed muffin pan and a anothe in a circle pan with a Ritz cracker crust. Both of them were great!!!

Cilantro Serrano Cream Sauce

Reviewed: Jul. 2, 2009
This was really good. I served it with "Lime Chicken Soft Tacos" and as a dip for tortilla chips. If I was to use it as a dip again, I would omit the salt in the sauce because the chips made it salty enough.

This dish was good. The only modifications I made was that I used only half the egg and milk because I was afraid that it would run over. Also, I only used half the mushrooms because I don't like them and 1 tablespoon of butter.
