I really liked this recipe. Easy enough to make even without a mixer. I did use butter flavored shortening because I didn't want the original shortening taste. Used this recipe to make Wild About You Cupcakes.

Oven Roasted Red Potatoes

Sam the Cooking Guy - White & Green Roasted Asparagus

Served with Sarah's Rice Pilaf and Broiled Scallops. This recipe tasted great in its own right. I liked the green asparagus more than the white though. Maybe I just got a more bitter batch of asparagus than usual??? Thanks for sharing.

Broiled Scallops

Maybe I'm just obsessed with cheese and fresh breadcrumbs, but I thought this recipe was missing flavor. Everyone else enjoyed it so it still gets 4 stars. Served with Sarah's Rice Pilaf and Sam the Cooking Guy - White & Green Roasted Asparagus

Cheesy Polenta

I really liked this. Next time, I would like to refrigerate it and then fry it to see how it tastes. Served with Rosemary Braised Lamb Shanks, Sugar Snap Peas, garlic mashed potatoes, and broccoli with lemon, butter, pine nuts.

Rosemary Braised Lamb Shanks

I'll have to taste the leftovers tomorrow but everyone seemed to like it. Even my sister, who doesn't eat lamb, really liked it. Served with Cheesy Polenta, Sugar Snap Peas, mashed potatoes, and my own creation of broccoli with lemon, pine nuts, and butter.

Cheeseburger Meatloaf

Everyone seemed to like this meatloaf. I did not have any problems making the meatloaf into a jelly roll. On the other hand, I did have a problem with the cheese finding its way out of the meatloaf even though I sealed it as best as possible. Served with PW's Crash Hot Potatoes and Bacon Wrapped Green Beans.

Tacos in Pasta Shells

Wow. As other reviewers have stated, I did substitute the chili powder with taco seasoning (Taco Bell brand). Also, I did not use as much sour cream. For the toppings, I did use diced tomatoes and a very small amount of finely chopped olives.
