Oh my...this is delicious! Delicious isn't even the word! The meat is fantastic, very tender, the sauce is yummy. The only changes I made were omitting the salt and increasing the sofrito by a little bit (personal taste). The smell was amazing in my house while this was cooking, my mouth was watering. My kids gobbled it up. Boyfriend hasn't tried it yet but I don't care, it gets 5 stars from me and I'm sure he's going to LOVE it. Thanks for sharing.

Mexican Baked Fish
Made this with fish and chicken since I know my kids hate fish. My boyfriend & I enjoyed the fish. I did have to add some extra seasoning. The kids didn't like the chicken but hey, kids are picky so no harm, no foul there.

Crustless Spinach Quiche
Oh, this is excellent! I am trying to lose a few pounds so wanted to try a crustless quiche and this is it for me! The only change I made was adding a little feta cheese. Very, very good recipe!
