About this Cook
I have three hungry teenage football players to feed, so look for low cost, fast and nutritious meals.
My favorite things to cook
Italian, slow cooker, and grilling are standbys. I love to cook wild game and fish. I try and experiment more on the weekends, but weeknight dinners are usually fast or cooked by the kids.
My favorite family cooking traditions
I gre up with a wonderful Ukranian heritage and I am now trying to perfect "baba's" techniques to pass onto my own children. I always thought that we were left out as we never had storebought soups, cookies, etc... but I really miss walking into the house in winter with mom's soup on the stove. My teenagers are interested in cooking and love to watch the "food network" and try new recipes and techniques.
My cooking triumphs
Sit down Christmas dinner for 16 in my tiny eat-in kitchen (no dining room), we needed to move the table to open the oven door but the brined turkey was AWESOME! We tent and hike a lot and I am able to cook great dinners over the campfire or campstove... perhaps things just taste better outdoors.
My cooking tragedies
My first dinner for boyfriend (now husband). I cooked lamb chops and they were way too overcooked... now they are perfectly grilled. As a teenager, I cooled banana loaves on the stove burner... and forgot to shut the burner off, so they were smoking!

Slow Cooker Stuffing
I rated a 3 as if I made as written it would have been way too wet and would of had a 1 star. Way too much chicken broth for 12 cups of dry bread. Five star for the flavour and addition of mushrooms was great. I added additional fresh herbs as we really like a flavourful dressing. My husband said it smelled like thanksgiving when he was mixing it up. I doubled the recipe, and mixed 3 eggs and broth to about three cups for the entire batch. I did use all of the butter. My pot is pretty hot so a total of 4 hours on low and I stirred every hour and kept the lid off for the final half hour. Would leave it off longer next time just to drive off a bit more moisture.

Spinach Tomato Tortellini
Made one small change and added a bag of prewashed spinach. I forgot to chop it but was fine. This is a great recipe and will certainly use it as a base. Sauteing some mushrooms for the sauce or adding peppers or otehr veggies. Also try to use milk as I usually don't have cream in the fridge. Only one kid didn't love it, but he is not a fan of tomato cream sauces, but he ate it as in this house its "eat what the cook makes or go hungry".

Buttermilk Pancakes II
What is Shrove Tuesday without pancakes and this is the best recipe by far. Made these exactly as written and the pancakes were over 1/2 inch high. It was hard to try and spread, so left them quite thick adn turned down the temp a bit. Hard to judge when to flip, as compared to thinner pancakes. I have 3 men (2 teenage football players) and for our family of 5 this was a perfect batch size. Don't usually buy buttermilk as I never aquired the taste for it, unlike my Irish father, so to tip the hat to Grandpa, we'll add to our favorites.
