added some anaheim peppers and red onion, seeded the jalepenos. just enough kick for those with spicy taste but mild enough for those who aren't so spicy. None left. Great on fish, pork and chicken as a condiment.

Avocado-Mango Salsa

absolute hit!! I used 1tbls tomatoe vinegar and 1/2 tbls balsamic vinegars since i had that on hand. some fresh mint brought the flavors up as well.

Chicken Chilaquiles

Great recipe for leftover baked chicken. Instead of using the blender i just dumped everything in one pot, added fresh cilantro, black olives and a can of rotel lime/cilantro tomatoes. chips and mexican blend cheese on top. the gang loved it.
