Mother of two beautiful girls, one 12 and the other 3. Been with my boyfriend for the past 6 years. Hopefully we will get married in Ireland this year. ( That is our plan anyway.) I work full time and love nothing better than to spend my weekend cooking for my family and friends.

Amy's Cilantro Cream Sauce

Southwestern Egg Rolls
These were amazing!!! I used did use egg roll wrappers, and did not freeze, just fried them up. Also used Cilantro rather than the Parsley. So yummy and will be making often! As another review suggested I made Amy's Cilantro Cream Sauce to go with it.

Cocktail Meatballs I
The meatballs were wonderful however; I am giving this a fourstar for the fact that I did change the sauce and baked the Meatballs rather than fry. I Reduced the Grape Jelly to 3/4 cup as a previous review indicated. I am glad I did as it would have been too sweet. I also added some Grainy Mustard and little Worcestershire sauce and hot sauce for a kick. Next time I am thinking I might add a few Red Pepper flakes. My Family loved them and I will be making again!
