Waffles II
I'm giving this only 3 stars because if you don't add anything to the batter to sweeten it up, or give it flavor, they are very bland. I made them w/choc chips for the kids, but ran out, so I had the plain one that was left. That being said, I think these have to be the lightest and fluffiest waffles I've ever had!! Adding the beaten egg whites really makes a big difference than ordinary waffles. Worth the extra effort. Take the advice of others and add either some sugar, frozen fruit, choc chips, or just some vanilla extract to add to the flavor.

Chicken Tetrazzini IV
Made this for tomorrow night. I have a really busy day tomorrow and wanted something that seems like I can make ahead of time, so I took some of Sarah B's pointers and made it up until the last step which is the baking. I'll do that tomorrow night. Anyway, I tasted it when I poured it into the casserole dish and it was great!! Like Sarah, I cooked the chicken in oil and crushed garlic. Took the chicken out of the pan and made the roux with the chicken bits. I also added the nonfat evaporated milk (trying to save on the fat, since I used the real butter), and since I didn't have Sherry, I used my hubby's homemade red wine...what the heck, right? Also used Chicken Stock in stead of Broth only because it was in the house. Simple enough recipe and so far, it's good. Hopefully it will refrigerate and heat well tomorrow.

Almond Cranberry Squash Bake
Made this as a Christmas Dinner side...it was so good! The squash and the cranberries are an interesting combination, but they compliment each other so well! I personally am not a fan of almonds, so I used Pecans instead...delicious! I didn't think I was going to have time to make it using a fresh squash, so I used frozen, it still came out great! Good to know if you're in a time crunch.
