Scalloped Potatoes and Onions
Made this for Easter dinner last night, and everyone raved! Yummy, yummy, yummy!!! Thanks for the healthy recipe that is also dairy-free (my daughter is allergic to dairy.) We served it with a little crumbled bacon on top for some added color and texture.

Zucchini Brownies
Have made this several times and it is perfect every time. Excellent way to use up frozen grated zucchini from the harvest. Also, for the sneaky chef, these brownies are a way to get your toddler to eat zucchini. Mine loves this moist "cake." I substitute soy milk for the frosting, since we have a dairy allergy, or omit altogether since in my opinion the brownie can stand on it's own two feet! Thanks for the fantastic recipe.

Cream-Filled Strawberries
Everyone loved this recipe for Christmas Eve. I revised it by using "Rich Whip" since we have a dairy allergy in the family. I used soy milk to mix with the pudding and it turned out fine. I also melted some "allergen free" chocolate chips and drizzled it across the top of the cream. This is bound to be a favorite for holidays!!!
