Hawaiian Slaw

Different and decent. I thought the original was a little bland....so I added a few things: fresh pineapple instead of canned, dried tropical fruit mix instead of just raisins, & fresh banana slices. (The banana slices are a must!) This isn't a favorite of mine, but I would make it again and it fit in well with my Hawaiian themed dinner tonight. Made with Kalua Pig in a Slow Cooker, baked yams, and fresh pineapple with Li Hing Powder.....ahhhh I miss Maui!!

Asian Lettuce Wraps

Great! I LOVE this recipe!! I used iceberg lettuce and immersed it in ice water for about 30 min before serving to get them nice and crisp. No pickled ginger, so just used fresh. The only thing that would have been nice is a little more heat, but that's just me. I should tell you, there must be a lot of sodium in here because I can't stop drinking water tonight! Well worth it though:) Great recipe...I'll definitely make this for company. ( I made the sauce suggested by RedRobyn except I added about 4 T Plum Sauce to it. DEElicious!)

Mango Cashew Salad

This was great! I was skeptical at first, but it really works. I used a nice balsamic vinegar "Fini" and it turned out perfect. Served with white rice and Asian Lettuce Wraps. I'll make this again.

Cedar Planked Salmon

Wonderful recipe for Salmon! This one is staying in my recipe box. Next time, instead of discarding the marinade, I will brush a bit more on at intervals while it's grilling. The marinade is TO DIE FOR!!

Pork Chops Stuffed with Smoked Gouda and Bacon

I followed Elly's idea and also used the pork tenderloin as I hate thick pork chops for some reason. Took and flattened it out, added the seasonings and goodies, then used twine to tie together. The time to roast took WAY longer for me, little over an hour at 400. While it was very good, I think I should have made a cream sauce to pour over as it was a tad dry....probably to my error in the roasting (: Thanks Darla for a nice recipe.

Silly me! I don't know what "rabe" is. I'm not even sure we have it in TN?? :-)....so I just used regular fresh broccoli. It was DELICIOUS!! My favorite green vege dish! I didn't even use the parm cheese...it doesn't need it.

Lemon Pepper Green Beans

Yum! What a pleasant surprise!! I'm trying to eat more fresh veges.....and these will stay in my recipe box. I don't really measure anything out...just guess at what I'm throwing in...turned out great. Oh, I did use pecans instead of almonds because that's what is always in the pantry. My 'hon liked these too and he's not really into anything with a lot of spice. **Update***...this is my FAVORITE vege recipe!!! I make these all the time now with the pecans instead of almonds. I can't get enough of these!!

Creamy Pumpkin Pie

Very good. I too only used 2 cups of pumpkin puree and the flavors turned out just right. I made my own pie crust and baked it for about 10 minutes before adding the pumpkin mix.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This was just ok for me. It was dry, maybe some cream cheese in the mixture would have helped....small pat of butter on each chicken roll? I don't know. I'm also a huge bleu cheese fan...but it just didn't seem to have a place here. I made up extra to freeze so I'm going to come up with a sauce to pour over top when I have this again.

Banana Bread VIII

Oh, this one is a keeper. By far the best banana bread I've eaten...even beats the slice I had in Hawaii! I followed this recipe with the only exception being, I used raw sugar instead of pure white....for health reasons....I'm trying to blot out of my mind the shortening part :) This bread is VERY moist, so I'm not sure what happened to other reviews when it is listed as being too dry. Mine came out to perfection....just had to bake an extra 10 minutes. Love it! Love it!

Mussels Mariniere

Reminded me of the mussels I had in Dingle, Ireland. Very good! I did leave out the green stuff because I didn't want to overpower the mussels but I might try them next time. We ate these with simple linguine with parm cheese on the side and then stuffed baby bellas with Maryland Crab cakes and baked. Crusty bread dipped in olive oil......perfect and fun meal!

Texas Ranch Potato Salad

This is a keeper!! I did what some others did and used half sour cream and half light mayo. Excellent still warm, and excellent the next day chilled. I can't wait to make this for my next barbeque. Pretty sure this is going to be the end of traditional mustard potato salad for me.

Drunken Grilled Asparagus

Tasty. I dumped the marinade, asparagus, and all into heavy duty foil shaped like a makeshift square pan...and placed on the grill. I like my asparagus REALLY done, nearly burnt, so I cooked for about 20 minutes.

Killer Artichokes

These are THE BEST artichokes EVER!!!! I made a little extra of the butter sauce because it is SO good! As someone else said, this is the only way I will eat artichokes on their own from now on!

Beer Margaritas

Very good! I am not a big mixed drink fan, but this one is great. I used Sprite Zero instead of water (think it might have been too dull without it) and Corona Extra. They are easy to drink (I had several *blush*)and the perfect refreshment after a long hot day working in the flowerbeds :>)
