Mimi's Giant Whole-Wheat Banana-Strawberry Muffins
Great Recipe! I altered just a bit for added good health. Added 2 tblsp ground flax seed meal, 1/4 cup quinoa flakes, and 1/4 cup oats (or oat bran works). Added a 1/4 cup extra applesauce due to additional dry ingredients. Reduced brown sugar to 1/2 cup and added 1 tblsp plus 1 tsp Stevia powder. Very moist and sweet, so could reduce sugar more. Made with strawberries the first time and they were delicious. Making with blueberries today - can't wait to try them.

Baked Ziti I
Very good! My kids said they would eat this every week. Made enough for at least 8 people. I made 3 adjustments: used italian sausage instead of hamburger. Sprinkled fresh chopped basil on top before the parmesan. And sprinkled some fresh grated romano cheese.
