Pistachio Crusted Chicken

Reviewed: Nov. 1, 2009
I liked this, as did my teens and husband. Moist, good flavor. I pounded the breasts thin as another rater suggested rather than strips. Agree that the dipping sauce (raspberry preserves and red wine vinegar) is a good accompaniment.

My Amish Friend's Caramel Corn

Made this with my son as part of a raffle basket for his Marching Band. It was easy and fun. Followed the tip about adding couple dashes of cayenne to brown sugar / butter mixture to give it a hint of heat!

Blissful Rosemary Chicken

Delicious. Not time consuming! Will absolutely make againg. Only suggestion is to cut the pepper down to 1 tsp. I love pepper but it was too much. I was surprised no one else commented about that,

Cola Onion Pork Chops

These were OK. A bit on the dry side. I have other pork chop recipes I like better. However, if you are making this recipe, I recommend 20 min on a side ont 30 per side.

Ropa Vieja

Very good. Smells delicious while cooking. I too subbed Rotel tomatoes. Jalapenos are included in the can. Very flavorful. Make it like a burrito with black beans and cheese. Only gave it 4 stars becaue my boys are not fans of tomatoes but till liked it.

Pass on this one. I will call it tender, but it lacked flavor. I doctored it up per the other reviews but it was just "fair".

Prosciutto Wrapped Chicken Breasts with Orange-Cranberry Jus

I would probably NOT make again. Turned out fine but sauce lacked something. I love proscuitto, and chicken and cranberries, but this was just fair, in my opinion.

So quick it's almost embarrassing to call it a recipe! Another wonderful idea: top some with a fresh raspberry instead of the pecan! I had them on hand and was short on pecans...equally good.

Jamie's Cranberry Spinach Salad

Reviewed: Nov. 4, 2008
Easy to make. Great. Made it for a cocktail party. Everyone loved it. I toasted the almonds in the oven w/o butter. They don't need it. Followed the suggestion of the gorgonzola and thin red onion slices instead of minced onion. For the dressing, I used 1/3 c oil, and used half sugar , half Splenda.

Excellent...and who woulda thought it! Unusual combination but great fresh flavors. It also stays fresh for a few days! I agree with the tip on doubling the dressing and the tip on adding the celery.

Fast and Friendly Meatballs

I, too, used the ground beef, pork, veal mixture because I had it on hand. I added some more parsley, Italian Seasoning, and some gsrlic. So easy to make. I got my 13 yr. old son to help me. He will likely prepare them himself next time. They come together quickly. Moist and Tasty! I will make them again!

Nothing to write home about. Needed a bit more zip. I did do the egg and that held it together. It just did not have enough flavor.

Light, Crisp Waffles

So light and crisp! Just as the names says! I too used the "1 c milk less 1 T, and added 1 T vinegar" since I had no buttermilk at the time. This recipe is a keeper!! Wonderfully light - not heavy. How could that one reviewer have followed the recipe and found them dry??

Pork Tenderloin in Bourbon

Reviewed: Feb. 10, 2008
This is a good recipe, in my opinion, however there are so many wonderful pork tenderloin recipes, I think this one is not among the best. I followed the suggestion of others and made a sauce by creating a roux, adding the marinade and water and adding more brown sugar. This made a nice sauce. I even added a dash of vanilla. If making this recipe I would strongly suggest making this sauce to accompany it.

Highland Toffee

I LOVE toffee. I have made at least 5 different toffee recipes. This was not among my favorites. I love oatmeal too, so I thought this recipe had potential. Sadly, to me it just came out too chewy and did not have the toffee flavor I sought.

Just OK in my book. I like other toffee recipes I've collected better than this one. Hazelnut flavor tends to overpower the toffee.
