Best clam chowder I've ever made!!!

I followed the recipe exactly. My family and I were a bit disappointed because the texture of these cookies are more like pumpkin bread, not a cookie. We are not soft-cookie fans and these are definitely a soft-cookie. The flavor is pretty good, but not great. Sorry to be a downer on this recipe... We really wanted to love it.

This is a wonderful recipe. To make the removing of the tomato skins easier I cored them first and with a sharp knife I carved a small X on the bottom of the tomato. This makes the skin come off much easier.
