I used unbleached WHOLE WHEAT FLOUR to up the nutritional value and it still came out fantastic. I like more of a cream cheese flavor in my frosting so I used only 1 1/2 cup of confectioners sugar with the 8 oz. of cream cheese, and the 1/2 cup whipped butter. I too followed suit with 1/2 cup applesauce with 3/4 cup canola oil, 3 teaspoons vanilla, 1/4 teaspoon nutmeg. Added 1/2 cup of raisins and 3/4 cup walnuts instead of pecans. YUM.
